Carb-free Pizza Muffins (FM)

*this recipe makes 4 pizza muffins (2 large or 4 small servings) (macros based on 4)
Ingredients:
3/4 cup almond flour
1/4 teaspoon garlic salt
1/4 teaspoon baking soda
1 tablespoon dried parsley
1 tablespoon dried oregano
2 eggs
*1/2 marinara sauce (I used homemade sauce w/ recipe and instructions below)
1/2 cup Mozzarella cheese
4 tablespoon pepperoni (chopped) *optional
Instructions:
- preheat oven to 350 and line 4 muffin tins with paper liners or silicon liners (that’s what I use and they never stick).
- in a medium mixing bowl combine the almond flour, baking soda, garlic salt, parsley and oregano, mix well.
- add the 2 eggs and mix together to make a doughy consistency then add 3 tablespoons of your marinara sauce and 1/4 cup of the mozzarella cheese (and 2 tablespoons of chopped pepperoni if you choose) and mix well.
- portion the blend into 4 muffin tins and let bake for 25 minutes.
- remove from oven, evenly distribute the remaining marinara and mozzarella (pepperoni too if you’re using it) and then put back in the oven an additional 10 minutes until golden brown on top.
- let cool at least 15 minutes before removing and enjoying 🙂 I like to garnish them with fresh basil.

If you’re making your own marinara sauce, try this recipe. I make my own whenever possible because I think it’s easy and healthier than other jarred options.
Ingredients for the Marinara sauce:
2 medium sized tomatoes, chopped (try to retain as much juice as possible)
3 garlic cloves, minced
1 teaspoon dried parsley
1 teaspoon dried oregano
1/2 teaspoon chili flakes (I actually used 1 whole teaspoon because I wanted it extra spicy)
salt & pepper to taste
Instructions:
- in a small sauce pan on the oven over medium-high heat.  drizzle on olive oil and sprinkle in the minced garlic, let cook 2-3 minutes until fragrant and slightly browned.
- add the chopped tomatoes and season with parsley, oregano, chili flakes and salt/pepper. Stirring frequently and smashing the tomatoes along the way.
- bring to a boil and then let simmer on low about 10 minutes.
Macros for the entire recipe:

Carbs: 14.1 g
Net Carbs: 9.6 g
Fat: 0.7 g
Protein: 3.1 g

So I don’t have muffinware, nor do I have an oven. But I do have a toaster oven. I used your idea and made the bread with this artisan almond bread mix (it’s simply almond flour, arrowroot powder, baking soda, sea salt, and coconut sugar, and you add egg and apple cider vinegar), and made the marinara sauce from some tomatoes I had (and I’d been trying to figure out what to do with them, since tomatoes upset me when eaten raw). I used a lot of herbs and garlic. OMG it was so good. I made it more of a flatbread style (SOOO nice and moist). I topped it with a lot more of the delicious marinara and some canned salmon. It was SO. SO. GOOD. Did not need cheese or anything. I did use butter.
Thank you for this great idea! I’m definitely going to make this regularly. Totally satisfies pizza craving. Next time I will top with some cheese, too.

Can I substitute the almond flour with coconut flour? If yes, what is the ratio?
I read somewhere on the internet that it is possible but you have to add 6 eggs for 1/2 cup coconut flour or some liquid (milk, syrup, juice). If someone has tried this and can help, I will really appreciate it! 🙂

Oh I can’t wait to try this out! I love the bread recipe from the ‘open face sandwich’ and this sounds very similar and so easy for meal prep through the week!!!

Although I can measure it also out, it would be nice, if you could also identify the macros/calories in total and for one piece and write it under the receipe.

I know, some data can slighly differ depending on what ingrediance has exactly been used by everyone, but just to have an idea prior to reading the whole articel.
It would be nice and others might also appreciate this.
Overall good receipe for a guilt-free “pizza- gravings” or just for snacking and easy to prepare.

These are really good! 🙂 I made them tonight & they are similar to something I’ve been buying frozen and wanting to make myself.
I used canned whole peeled tomatoes chopped for the sauce and added some finely chopped onion with the garlic.
