Carrot Cake Oatmeal (WEM)

carrot cake oatmeal POST

*This recipe makes 2 servings

Ingredients:
1/2 cup unsweetened almond milk
1 cup rolled oats
1 cup shredded carrots (or finely chopped)
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1 tablespoon maple syrup (or Choc Zero Maple Syrup to lower the carbs)
2 tablespoon raisins
2 tablespoons chopped pecans
(optional) pinch of unsweetened shredded coconut

Instructions:

  1. In a medium sauce pan over medium-high add 1 cup of water, the almond milk and a pinch of salt to boil.
  2. Once it’s boiling add the carrots let cook for 1 minute then reduce heat to low and add the oats, vanilla extract, nutmeg, cinnamon, ginger and raisins. Β Let cook on low about 2-3 minutes until liquid is absorbed.
  3. Portion out the oatmeal into bowls and top with maple syrup (or agave), chopped pecans and shredded coconut.

    Does anyone feel that eating low-carb is energy zapping? Anyone have any tips to gain energy at the same time eliminating carbs?

    Guys you have to TRY this!!
    It seems weird to put carrots in an oatmeal, but its SO good!

    I’ve made it already twice for me and my boyfriend, we could snack on this oatmeal all day long!

    Zuzka I am looking everywhere for a zucchini muffin recipe! All recipes I find are so calorie dense or use sugar and flour… do you accept my challenge to try to make a low calorie yummy zucchini muffin recipe? :p

    thanks for the great oatmeal recipe…especially appreciate it to get some veges in for my picky 3 year old. He does love oatmeal so it is hardly a sneak to get it in.

    I love carrot cake and I love oatmeal, so I was pretty excited to try this recipe. Wow! So tasty! I made mine with just a little honey instead of maple or agave, but I was curious–what makes this meal a WEM? Is it the oats? All the sugar from the carrots and raisins? Just wondering πŸ™‚
