Cauliflower Thyme Soup (FM)

*Yields 4 portions
Ingredients
2 tbps extra virgin olive oil
2 cloves garlic, finely chopped
1 small shallot, chopped
1 tbsp fresh thyme, crushed in mortar and pestle
1 jalapeno, finely chopped
3 stalks celery, chopped
1 head cauliflower, trimmed and roughly chopped
2 small carrots, peeled and chopped
8-10 cups organic vegetable broth salt and pepper to taste ( it can be chicken broth)
Instructions
- Heat up the olive oil in a large pot over medium heat, then add garlic, shallot, thyme, and jalapeño. Cook for 2 minutes while stirring.
- Add celery, carrots, and cauliflower and cook for 5 minutes.
- Add vegetable broth (enough to cover all the veggies). Cook for about 40 minutes until the veggies are tender.
- Let the soup cool down for a few minutes and then transfer into a blender and blend until smooth. Season with salt & pepper, garnish with fresh thyme leaves and serve.
