Cheesy Low Carb Breakfast Waffle (FM)

I’m telling you right now, this might be your all time favorite breakfast!
*this recipe makes 2 servings, each is about 250 calories but is very filling! It’s also easy to double everything and make enough “batter” and store in the fridge for up to a week. You can then easily add to your waffle maker in the morning for a delicious breakfast in only a few minutes!
Ingredients:
1/2 cup frozen spinach, let thaw a few minutes and squeeze out as much access water as possible
1/2 cup crumbled cauliflower (use processed it in my vitamix until it was finely chopped)
1/4 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
2 pieces bacon (optional), cooked and chopped
1 teaspoon garlic powder
1 teaspoon onion powder
2 eggs
salt & pepper to taste
Instructions:
- turn on your waffle maker and let heat up on medium-high (grease if necessary according to your machine, mine is non-stick so I didn’t do that)
- in a small bowl whisk the two eggs, season with salt and pepper
- in a medium bowl add the spinach, crumbled cauliflower, cheeses, bacon pieces, garlic powder, onion powder then mix well
- add the beaten eggs to the other ingredients and stir, mixing well
- add half of the mix into the waffle maker and close – let cook about 6-8 minutes (check after 5-6 minutes), they’re done when it’s completely browned on top, cooked through, and easily removed from the griddle
