Cheesy Spagetti Squash with Broccoli (FM)

*this recipe makes 2 servings (keeps great as leftovers for lunch or dinner)
Ingredients:
1/2 spaghetti squash, scoop out the seeds
2 cups broccoli florets, chopped
2 tablespoon olive oil
1 tablespoon butter
1 tablespoon coconut flour
1/4 cup coconut milk
1/4 cup cheese (I used half cheddar and half mozzarella)
Instructions:
- place the spaghetti squash half, open side down in a microwave safe bowl, fill with 1/4 inch of water on the bottom and microwave for 10 minutes.
- in a medium sauce pan heat the olive oil over medium heat and add the broccoli florets. let cook, stirring frequently about 7-10 minutes until softened
- remove broccoli and add to a large mixing bowl
- lower the heat on the stove top and add butter to the sauce pan, let melt before sprinkling in the coconut flour and whisk to mix well, then pour in the coconut milk and cook stirring often about 3-5 minutes
- scrape out the spaghetti squash and add to the bowl with the broccoli
- in the sauce pan, after the coconut milk is warm throughout, slowly add cheese while stirring until all is melted.
- pour cheese mix into the bowl with squash and broccoli, mix well and enjoy!

Wow just finished making this and packing up my lunches, and its even better than I thought it would be. I think I could get my anti-squash husband to give it a go for dinner if I give him some chicken with it. 🙂
I added pepper and a little garlic powder at the end but followed the recipie other than that. Super easy too.

Hi! It’s a big yellow squash actually called spaghetti squash. When you cook it, it shreds and is like spaghetti ! A delicious alternative ! I eat it with meatballs and sauce when my family has regular spaghetti. You just cut it in half and remove the seeds. Drizzle with olive oil, add salt and pepper and bake until you can scrape it out with a fork and it is stringy. Try it!!

Are you using the canned coconut milk? Or is it in a carton like almond milk? Thanks and can’t wait to try it
