Chicken and Cheese Quesadilla (WEM)

This recipe uses the homemade whole-wheat tortillas I made recently…

Ingredients:
1 large whole wheat tortilla
3/4 cup cooked chicken, shredded (I used leftover chicken from a whole roasted chicken I had)
1/3 cup shredded cheddar cheese
1 tomato, chopped
1/4 avocado, sliced
1 tablespooon sour cream
optional sriracha or hot sauce

Instructions:

  1. Fill half of the large tortilla with shredded chicken and sprinkle on the  cheddar cheese.  Fold in half.
  2. In a  large frying pan, over medium high heat, add the quesadilla and cover with a lid, let cook for 2 minutes each side and leave covered until chicken is warm throughout and the cheese is all melted.
  3. Top with sliced avocado, chopped tomato and sour cream.  Season with salt & pepper to taste and drizzle on some sriracha (optional) then enjoy!

    I just made this…it was soooo delicious….I did not use bacon in the gravy because I used ground turkey sausage and regular turkey mixed together. I doubled the recipe so I could meal prep and have some for dinner for my family! It is on my favorite list and I will share this recipe with everyone!!!
