Chicken Breast with Brie Cheese, Strawberries, Tomato & Herbs (FM)

ChickenBreastWithBrieCheeseTomatoStrawberies&Herbs

*yields two portions

Ingredients:
6 chicken tenders (or slice 2 large chicken breasts into 3 thinner slices)
6 slices brie cheese
1 tomato sliced
1 cup sliced strawberries
3 tbsp extra virgin olive oil
2 tbsp freshly squeezed lime juice
2 tsp honey
1 serrano chile, seeds removed, minced
Freshly ground black pepper & salt
3 tbsp fresh mint chopped
3 tbsp fresh cilantro chopped
1 tbsp oil for sautéing (I use algae, avocado or coconut oil)

Instructions:

  1. In a large skillet heat up the tablespoon of cooking oil over medium/high. Season the chicken tenders with salt & pepper and sauté for about 4-5 minutes on one side until the bottom is golden brown, then flip and sauté for another 2-3 minutes. Place the slices of Brie cheese on top of each chicken tender, cover with lid and cook for another 2 -3 minutes until the cheese melts lightly on top. Place the chicken tenders with melted cheese on plates.
  2. To make the dressing, which together the olive oil, lime juice, honey, and serrano. Toss the sliced strawberries and tomato with the dressing.
  3. Cover the top of each chicken evenly with the dressing, strawberries and tomato. Serve immediately.

    The instructions doesn’t say what to do with the chopped cilantro and mint.
