Chicken & Cheese Stuffed Jalapeños (FM)

*Makes 3 Portions (1 Portion = 4 stuffed jalapenos)

Ingredients:
12 jalapeno peppers halved and seeded
2 cups cooked and shredded chicken breast
1 cup shredded sharp cheddar cheese
8 oz cream cheese
1 whole bunch chives chopped
1/2 tsp garlic powder
Salt to taste

Breading:
2 tbsp butter (room temperature)
1/2 cup freshly grated parmesan cheese
1/2 cup almond flour

  • combine all 3 ingrediens in a medium size bowl and mix well until a crumbled breading is formed.

Instructions:

  1. Preheat the oven to 400F degrees.
  2. Place the halved and seeded jalapeño peppers on a plate and microwave them for 2 minutes to make them softer.
  3. In a large bowl add the cheddar, cream cheese, chicken, chives, garlic powder and salt. Mix until well combined. That’s the stuffing for the peppers.
  4. Stuff the jalapeño halves with the chicken/cheese mixture evenly and then cover each one of them with an even layer of the breading.
  5. Transfer the peppers on a large baking sheet and place them into the preheated oven.
  6. Bake for 20 – 25 minutes or until golden brown on top. Let them cool down before serving.

      You’ll get 24 little jalapeños. If you want them just as a snack then one or two would be enough. If you want them to be one of your main meals, I would say 4.

    I made this recipe twice and I won’t stop there!! LOL! These are so super-yummy!!!…the second time I opted to skip the almond flour on top and it was still bomb. Thanks so much Z, I love every recipe I’ve tried so far.

    I had tons of leftover filling so next time I’ll cut that part in half. I estimate 75 calories per 1/2 filled jalapeño and 6 grams of protein each. I had 4 of them with a cup of pumpkin chipotle soup for dinner. I added whey protein to the soup. 36 grams of protein and 475 calories for the entire meal 😋
