Chicken & Cheese Stuffed Jalapeños (FM)

*Makes 3 Portions (1 Portion = 4 stuffed jalapenos)

Ingredients:
12 jalapeno peppers halved and seeded
2 cups cooked and shredded chicken breast
1 cup shredded sharp cheddar cheese
8 oz cream cheese
1 whole bunch chives chopped
1/2 tsp garlic powder
Salt to taste

Breading:
2 tbsp butter (room temperature)
1/2 cup freshly grated parmesan cheese
1/2 cup almond flour

  • combine all 3 ingrediens in a medium size bowl and mix well until a crumbled breading is formed.

Instructions:

  1. Preheat the oven to 400F degrees.
  2. Place the halved and seeded jalapeño peppers on a plate and microwave them for 2 minutes to make them softer.
  3. In a large bowl add the cheddar, cream cheese, chicken, chives, garlic powder and salt. Mix until well combined. That’s the stuffing for the peppers.
  4. Stuff the jalapeño halves with the chicken/cheese mixture evenly and then cover each one of them with an even layer of the breading.
  5. Transfer the peppers on a large baking sheet and place them into the preheated oven.
  6. Bake for 20 – 25 minutes or until golden brown on top. Let them cool down before serving.

    Hi Dear Zuska! I watched your portion sizes of your meal from your food journal .. it is so small i can’t get full of it.. how can one’s get used to it how did it work for you to eat small portions ..
    I really need to make my smaller but i don’t how to stick to it… please help with advice.. thank ou!

      You have to slow down when you eat and focus on chewing and tasting the food. The faster you eat, the longer it will take for you to feel full. If you slow down, you will realize that you’ve been eating way too much and your body is actually full after eating smaller portions. This is a good strategy for someone who wants to lose weight. People with different body type who wish to gain weight should do the opposite.
