Chicken Corn Chowder (WEM)

*yields 4 portions

Ingredients:
4 slices bacon cut into small pieces
1 large shallot coarsely chopped
1 tbsp butter
4 cups frozen corn
2 cups chicken boulion (I use low sodium Better Than Bouillon)
3 cups of cooked or baked shredded chicken
1 1/2 cup heavy cream
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 can organic diced tomatoes drained (14.5oz)
1/4 tsp xanthan gum
freshly ground black pepper

Instructions:

  1. Cook the bacon pieces in a large pot over medium/high heat until they start to turn golden brown but don’t over cook to make them crispy.
  2. Lower the heat to medium. Add the chopped shallot to the bacon and sauté until the onion turns soft – about 4 minutes.
  3. Add the corn and butter and cook for about 2 minutes. Add the 2 cups of chicken  bouillon and cook for another 4 minutes.
  4. Add the heavy cream and sprinkle with the xanthan gum. Keep stirring until the soup begins to thicken.
  5. Add the drained diced tomatoes and mix well.
  6. Transfer half of the soup into the high speed blender and mix until smooth. Pour the mixture back into the pan.
  7. Add the cooked shredded chicken, and shredded cheese. Cook while stirring until the cheese melts.
  8. Season with freshly ground pepper to taste.

    3 servings?!?!? It is so good but I can eat about a quarter of one of these servings. My husband is not complaining about the leftovers though. Another delicious recipe! Thanks!

    This soup is amazing! Even my 3 and 5 year olds (who don’t normally like soup) gobbled it up! Thank you! It was strange making and eating soup on one of the hottest days on Vancouver Island but SOOO worth it. Cheers!

    I knew today was going to be a very busy day and I wouldn’t have the time or energy to make this tonight, so I just put all the ingredients in the crock pot this morning. Except for the cream and the cheese. I added those as soon as I got home, so the cheese would have time to melt before dinner. My house smells fabulous, the soup is amazing, and a huge hit with my 5 yr old. It was so nice to come home after a long day to a fabulous and healthy meal!

    I wrote a comment about my experience with this recipe and it was not allowed to be posted because I found the recipe to be inedible as a result of the Bouillon. I find this kind of censorship unfortunate, as it was my honest experience. Additionally, someone else on the thread, or you Zuzka yourself, could have commented on a way to tweak the recipe and make it better…..

    This yields 6 servings for me. It has 640 calories: 38 g fat, 33 g carbs and 42 g protein. I used 2 cups chicken bone broth, 6 slices bacon and a full onion. It was super popular with my family. I used canned chicken and made it again today since everybody was mad it was gone. It’s super easy with canned chicken with no change of flavor.
