Chicken Curry with Pomegranate (FM)

*yields 4 portions for women, 2 portions for men (check out portion sizes in my nutrition guide)

Ingredients
  • 3 teaspoons yellow curry paste
  • 1 teaspoon paprika
  • 3 tbsp extra virgin olive oil for the marinade
  • 4 boneless, skinless, chicken thighs
  • 3 tablespoons extra virgin olive oil for cooking
  • 3/4 cup chicken broth ( I use better than bouillon – low sodium)
  • 5 garlic cloves, finely chopped
  • 6 thyme sprigs (you can also use rosemary)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • zest from 3/4 lime
  • 1 lime, sliced in half
  • Arils (seeds) from 1/2 pomegranate
  • 10 basil leaves, shredded
Instructions
  1. In a small bowl, add curry paste, paprika,  salt, pepper, and 3 tbsp olive oil. Mix well.
  2. Brush the chicken thighs on all sides evenly and generously. If you run out of the marinade too soon, make another batch.
  3. Add olive oil to a deep skillet over medium heat, add chicken (oil should sizzle) and cook on each side for 3 minutes.
  4. Add chicken broth,garlic, thyme, salt and pepper, lemon zest and add the lemon halves to the to pan and bring to a boil.
  5. Cook chicken uncovered on low heat and let it simmer until most of the liquid has evaporated (about 7-8 minutes) and chicken is cooked through.
  6. Transfer chicken to a plate along with garlic and remaining liquid (if there is any left). Discard thyme sprigs and lime.
  7. Top with pomegranate and basil. You can choose the side for this dish. I had it with just a simple mixed green salad and it was delicious. You can have it with rice, or baked potatoes as Workout Earned Meal.

    You can eat the seeds in the Arils. I never knew this till I started growing a Pomegranate tree. Please make a video of some Holiday recipes maybe with Jesse and his family making cameos.

    OMG I made this tonight and it was SO FREAKING FLAVORFUL. I love herbs and spices. I used the rosemary growing outside of my apartment. I mixed extra olive oil with curry powder to make the “paste”. I love the lime zest, juice, and cooking with the lime halves in the pan. Great ideas. Really easy, flavorful, relatively quick recipe! Love!
