Chicken Parm Zucchini Boats (FM)

*Makes 2 Portions (1 portion = 1/2 a zucchini, stuffed)
Ingredients:
1 zucchini, cut in half and spoon out the seeds
1 tomato
1 tablespoon onion
1 garlic clove, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 cup chicken stock
1 cup cooked chicken, shredded
2 tablespoon mozzarella cheese
pinch of crushed red pepper
salt and pepper
Instructions:
- Preheat oven to 350 degree F.
- Bring a medium pot of water to boil and add the zucchini halves and let boil for about 2 minutes, they’ll turn bright green
- Add the tomato, onion, minced garlic, chicken stock, basil, oregano and pepper flakes to a food processor and pulse until blended.
- Mix the cooked chicken in a bowl with the tomato blend and spoon into the zucchini halves. Season both with salt and pepper and place in oven.
- Bake the zucchini in the oven for 15 minutes then remove and sprinkle on the mozzarella cheese and bake for an additional 5-7 minutes until slightly brown on top
