Chicken Salad with Avocado Mayo in Cucumber Boats (FM)

Ingredients:
1 cucumber, cut in half length wise and spoon out the seeds
1 cup cooked chicken, chopped (I like to buy whole roasted chicken from the grocery store and have it on hand for simple, quick recipes like this)
1 tablespoon avocado mayo
1 tablespoon currants
1 tablespoon chopped walnuts
1/4 teaspoon celery seed
1 green onion, sliced thin
Instructions:
- In a medium bowl mix together the chicken, avocado mayo, currants, and chocked walnuts. Season with the celery seed and some salt and pepper, mix well.
- Spoon the chicken mix into the cucumber boats and then sprinkle on the green onion and enjoy!
