Chili Soup with Edamame (FM)

*Makes 4 portions
Ingredients:
1 lb ground beef (grass-fed)
4 good quality fully cooked turkey or chicken sausages sliced
1 shallot
2 cups (16 0z) mild salsa (I used Newman’s Own)
1 tsp ground cumin
1 1/2 cup edamame (buy shelled frozen and follow the instructions on the package)
2 tbsp dijon mustard
2 cloves garlic minced
2 tsp chili powder
3 cups water
Salt & pepper
2 tbsp oil for sautéing
Toppings ideas:
sour kraut or fermented veggies, avocado, red onion, cilantro
Instructions:
- Heat up the 2 tbsp oil in a large skillet over medium/high and sauté the shallot for couple minutes until golden brown
- Add the ground beef and cook for about 4-6 minutes until cooked through, then add the salsa and sausages. Add the cumin, chili powder, minced garlic, and dijon mustard and mix well. Add the edamame and water cook for 2 minutes.
- Add the toppings to your taste and serve. I added 1/2 avocado, 1 cup of fermented veggies and 1/4 sliced red onion.

Not sure you really need the word soup in this as Chilli is eaten as a soup. Looks good.

Yeah, the sausages go in right after the beef is cooked. I forgot to add that. Good you noticed 🙂
