Cinnamon Roll Fat Bomb

*Yields 14 fat bombs. Each fat bomb is about 95% of fat, less than a gram of carbs and only 100 calories.
Ingredients:
100g cocoa butter
6 tbsp powdered erythritol (I use Swerve)
4 oz cream cheese (full fat – I use original Philadelphia cheese)
1/4 tsp vanilla extract
3/4 tsp cinnamon
3 tbsp almond butter – smooth (make sure almonds are the only ingredients – salt is ok, just no added sugar)
Instructions:
- Break the cocoa butter into small chunks and melt in a microwave (2 minutes) or on the stove top – bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl. Stir the butter occasionally until all the little chunks melt.
- Add the cream cheese and almond butter and whisk until smooth.
- Add the vanilla extract, erythritol and cinnamon and whisk some more until very well combined.
- Take a plastic ice tray with 14 slots and fill them up with the mixture – one tablespoon into each slot.

Yay! A fat bomb recepie, I’ve been meaning to try this! Ikea makes some cute silicone shape trays for fat bomb and chocolates, I found mine at a thrift store.

I added a pinch of salt to enhance the flavor.
Thinking of other add-ins to try next time:
Maca powder and slivered almonds, or for chocolate ones, add cocoa powder.
Great treat to have small serving after a meal!

How do you store them? In the freezer? It doesn’t really say and how long can they be kept. Since I do not have an ice tray i took little mini praline paper forms. ๐

Approximately how much in volume is 100g of cocoa butter? I donโt have any way to weigh it out. Is it about 1/4 cup, 1/2 cup? My 5 yr old wants to make these with me today.
