Cinnamon Roll Fat Bomb

*Yields 14 fat bombs. Each fat bomb is about 95% of fat, less than a gram of carbs and only 100 calories.

Ingredients:
100g cocoa butter
6 tbsp powdered erythritol (I use Swerve)
4 oz cream cheese (full fat – I use original Philadelphia cheese)
1/4 tsp vanilla extract
3/4 tsp cinnamon
3 tbsp almond butter – smooth (make sure almonds are the only ingredients – salt is ok, just no added sugar)

Instructions:

  1. Break the cocoa butter into small chunks and melt in a microwave (2 minutes) or on the stove top – bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl. Stir the butter occasionally until all the little chunks melt.
  2. Add the cream cheese and almond butter and whisk until smooth.
  3. Add the vanilla extract, erythritol and cinnamon and whisk some more until very well combined.
  4. Take a plastic ice tray with 14 slots and fill them up with the mixture – one tablespoon into each slot.

    Is coconut oil an ok substitute for cocoa butter?

      I think for this recipe, it needs to be cocoa butter. She has another recipe for chocolate with nuts using coconut oil and coconut butter. It’s on YouTube.

      No. Cocoa butter is solid at room temperature which is why it was chosen

    I had a really hard time finding cocoa butter. Is cacao butter the same and interchangeable in this recipe?

      From cooking/baking personally,the cocoa butter is an important ingredient, I have found some on thrive market and Amazon that are both edible πŸ™‚ I’ve not personally used it yet, but I don’t think you’ll capture the same flavor with something else

        Thank you for the quick response Steph, I was afraid of that. I already used it for my first batch so i hope its ok to consume in keto diet. I will order some cocoa butter online for my next batch.

          I think if you use something like coconut oil or manna, you’ll be okay, just check out the macros and compare it to this recipe πŸ™‚ obviously I’m not Zuzka but I think it will work out okay, just check to be sure. You won’t get the same flavor but as long as your macros are comparable you should be fine for what they’re for πŸ™‚

    When I added the cinnamon and sweetener, the liquid cacao butter separated from the cheese and almond butter. It was lumpy and wouldn’t mix again. They’re delicious and I’m still eating them. But what did I do wrong?

      This happened to me too. I used the double boiler method, but think I should’ve used low heat and once the cocoa butter was melted maybe take it off the heat before adding the other ingredients..? I ended up letting it cool and then used a hand mixer to help it come together a little bit more, ultimately i threw it in a pan in the freezer and it turned out fine and delicious.

      I just made a second batch but this time I did not use my stick blender. The bender really helped to incorporate the cocoa butter with the ingredients. My second batch is not coming out of the silicone ice molds because the oily cocoa butter was not blended in with the other ingredients. I definitely will use the stick blender when making these

    Ok, here is an odd question. So I am assuming they are stored in the freezer. Do they need to be heated up before eating?

      No these are meant to be eaten right from the freezer or refrigerator. If you find them too hard frozen, then just keep them in the fridge. Don’t let them melt though.

    These are delish!!! cures the cravings. I made them for the first time on week 4, I find that I am craving a little more now then i was in the beginning. I love this program

    I have just made these. OMG, are they amazing??? So yummy. I’m only on day 2 but wanted to have them ready in case I crave something sweet. I used half the erythritol (I noticed while doing zshread meal plan that Zuzka’s tooth is sweeter than mine haha) and they are perfect. Thanks Zuzka for a great recipe 😘

    I’ve been eating one of these to satisfy my sweet tooth. It works wonders. I eat it with a coconut turmeric milk with all my favorite spices
