Coffee Ricotta Mousse Dessert (FM)

Ingredients:
1/2 cup hot brewed coffee
2 1/2 teaspoon dry gelatin
1 (15 oz) container ricotta cheese
1 teaspoon instant espresso
2 tablespoons powdered erythritol
1 teaspoon vanilla extract
pinch of salt
1 cup heavy whipping cream
sugar-free cocoa nibs (optional garnish)
Instructions:
- Pour the gelatin into the hot coffee and stir to dissolve. Set aside in the fridge to let cool.
- In a medium sized bowl add the ricotta, instant espresso, vanilla extract erythritol and salt. Using an electric hand mixer on low, stir until mixed well and fluffy.
- Pour in cooled coffee gelatin mixture and blend on low until smooth.
- Add the heavy cream and blend on high until smooth and fluffed (about 3 minutes).
- Portion into glasses, top with cocoa nibs and leave in the refrigerator for 2 hours until serving. Enjoy!

This looks amazing! You’d have to really have self control or make sure you have someone to share this with because of the heavy whipping cream. Or you could substitute for coconut milk. If you get it in the can and put it in the fridge it gets stiff and is good for whipping into a cream.

Ooo that is a great idea. I am thinking of making this recipe. It sounds so delicious. But i love the flavor of coconut and coconut cream would be great instead of the whipping cream. I have seen canned coconut cream at the store (not the same as creamed coconut which is the whole thing including pulp).

This recipe is fantastic! I finally found all the ingredients this past weekend – I could not believe how challenging it was to find cacao nibs and powdered erythritol! This recipe is definitely going in my favorites!
