Crunchy Broccoli Veggie Dip (FM)

This is so good you can even just enjoy the crunchy broccoli dip as a snack on it’s own! This recipe makes about 3 cups of dip, stores well in the fridge for a few days too 🙂
Ingredients:
4 cups of broccoli
1 garlic clove, minced
2/3 cup slivered almonds
1/2 lemon, juiced
1/3 cup finely shredded parmesan cheese
2 tablespoon olive oil
1/2 cup ricotta cheese
assorted veggies for dipping
Instructions:
- In a large pot over medium heat, add about a 1/2 inch of water to the bottom and let boil. Â Add the broccoli and cover with a lid, let cook 1-2 minutes just to steam and take the raw edge off the broccoli.
- In a small saute pan over medium heat, add the slivered almonds and stirring frequently, toast until slightly browned (about 3-4 minutes)
- In a food processor, add the broccoli, minced garlic, parmesan cheese toasted almonds and lemon juice. Â Pulse until mixed and chopped well. Slowly pour in the olive oil while the processor mixes.
- Add the broccoli mix to a medium bowl and add the ricotta cheese, stir to mix well then portion out and enjoy alongside some fresh veggies!

these are almonds in shape of sticks. Maybe because it would processed more easily when blending them? otherwise I guess whole/standard almonds would work too ?!

Slivered almonds are just sliced almonds, you can find them in your local grocery store in the baking goods section with things like shredded coconut. Sometimes it will be in the bulk food section as well. (Working in a grocery store is helpful sometimes haha)

This looks great! Just one question: what are we supposed to use the parmesan cheese for? it appears in the ingredients list but not in the instructions. Thank you!

This recipe is good. Nice & garlicy.
With the left overs I heated it up in a saucepan then added 2 hard boiled eggs. was quite delicious the next day & kept me full till dinner.
