Drunken Meatballs (FM)

*Makes 3 Portions (5 meatballs each serving)
Ingredients for the meatballs:
1 lb ground turkey
1 egg
1/3 cup almond flour
2 Tbsp grated parmesan cheese
2 Tbsp chopped bacon
1 Tbsp chopped fresh sage
1/4 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp ground black pepper
2-3 Tbsp oil for frying
Ingredients for the drunken sauce:
1⁄4 cup chopped bacon
1⁄2 cup dry white wine
1 Tbsp fresh sage chopped
1⁄2 tsp lemon juice
1⁄4 tsp garlic powder
1 tsp granulated sugar substitute (Swerve)
1⁄4 cup butter
Ingredients for the Mashed Cauliflower:
1 small head of cauliflower
2 TBSP of butter
Instructions:
- Combine well all the ingredients for meat balls (except for the oil) in a bowl and form a big dough. Form about 16 same size meat balls out of the dough.
- Heat oil in a large non-stick frying pan over medium heat and add the meat balls. Cook the meat balls for about 3 minutes on each side until completely cooked through. Remove the meat balls from the pan and set aside on a plate.
- Make the sauce. Add the chopped bacon into the same pan where the balls cooked (if you burned the bottom of the pan, you’re going to need a new one) and cook for 2-3 minutes until crisp. Add the wine, sage, lemon juice, garlic powder and sugar substitute and cook until reduced by half. Then add the butter and move it around the pan until melted and the sauce is slightly thickened.
- Remove from heat, season with salt and pepper and add the balls to coat them with the sauce.
- Serve on top of mashed cauliflower.
Mashed cauliflower:
- Break a small head of cauliflower into florets and steam in a large pot using a simple vegetable steamer until soft.
- Let it cool down for a few minutes then transfer into a blender and add 2 tbsp of butter. Blend until smooth. Add salt to taste.

I am curious. I bought all of the ingredients for this recipe and am curious if I can substitute coconut flour for the almond flour? Family member has an allergy to almonds.

These are so awesome. The whipped cauliflower is amazing….. taste like mashed potatoes! I’ve made these several times and substituted whenever I didn’t have all of the ingredients .

Is this recipe supposed to include the cauliflower for the z shred meal plan? I didn’t see cauliflower on the shopping list.

I think in the meal plan it’s just the meatballs, without the cauliflower mash.

These are delicious, but whoa(!) 5 is way too many in one meal for me! I made the cauliflower too and I was at 80% full with about two and a half of the meatballs.

I substituted carrots for the cauliflower and prepared the same way and I thought the meatball and carrot flavors were amazing together!
