Garlic Lemon Brussels with Salmon (FM)

*this recipe makes 2 servings (or a good lunch with leftovers for dinner) and it only takes 15 minutes with very little dishes to do after 😉
Ingredients:
1/2 lb salmon filet
10 brussel sprouts, peel off the outer leaf and cut in half
1 lemon
3 garlic cloves, minced
2 tablespoons fresh parsley, chopped
2 tablespoon olive oil
1 tablespoon dijon mustard
salt & pepper to taste
2 tablespoon grated parmesan
Instructions:
- preheat oven to 450 degree F and line a baking sheet with foil.
- in a large bowl toss together the brussels sprouts, half of the minced garlic, juice from half the lemon and 1 tablespoon of olive oil, toss to coat evenly, then place face down on the baking sheet.
- making the sauce for the salmon… in a small bowl mix together the chopped parsley, the remaining garlic, dijon mustard, juice from the other half of the lemon and the last of the olive oil
- place the salmon skin side down on the baking sheet next to the brussels and layer the sauce on top.
- put the baking dish in the oven for 13-16 minutes until the brussels are browned and can easily be pierced with a fork. You can fold the foil over the salmon and let rest for 5 minutes before serving.
- sprinkle on a little parmesan cheese to the brussels and enjoy alongside the salmon.
