Ginger Carrot Chicken Soup (FM)

Ingredients
1 1/2 lb chicken breasts
1 large yellow onion
1 cup coconut milk
3 cups chopped carrots
1 tbsp freshly grated ginger
2 tbsp coconut oil
Freshly squeezed juice out of 1 orange
3 cups unsweetened almond or cashew milk
1 tsp cinnamon
1/2 tsp chilli
salt
pepper

    I made this soup last night and brought it with me for lunch with a nut bread. It was so good, especially the next day. Thanks so much for sharing this recipe. Please keep posting more recipes, I always follow and re-create the new ones!

    This is delicious! I can’t do eggs for breakfast and have had trouble finding what I like instead. This was awesome for breakfast!! Zuzka does your vitamix have a soup setting? I just threw all ingredients into the vitamix while my chicken was sautéing. Put it on the soup setting and it was ready in 6 minutes. Then I just diced and added the chicken. Very easy and quick.

    This was a very good recipe! I modified it a bit by adding 4 cloves of garlic and more spices (turmeric, more chili). I also didn’t have cashew milk so I just used coconut beverage (in the carton) in addition to the canned coconut milk. The green onion garnish is perfect for this recipe and some lighted toasted and chopped cashews were nice. It’s even tastier the next day. I could eat this soup every week!

    Made this again but added freshly grated tumeric from the garden. Absolutely beautiful with a vibrant orange colour.

    I did it today for dinner!!!! Fantastic!!! The mix of the ingredients is not common here in the italian kitchen, especially coconut milk and chicken or turkey (i used it today), but the result is delicious!
