Homemade Low Carb Chocolate (FM)

It’s been a while since I had an actual store bought chocolate, made out of all the usual ingredients including sugar or sugar alcohols. I used to eat that almost every day, can you believe that? Of course, that’s why I was so often at the dentist’s office. I guess mom was right. I’m trying to be good with my low carb diet and it’s been paying off in terms of more energy and less cellulite. That’s why I’m so excited about recipes such as this one, because it’s sugar free, low carb and gluten free dessert that is also very versatile.
This recipe falls into both lifestyle diets that I’ve been cycling through. The Ketogenic and the Low Carb diet. The Ketogenic diet is sometimes hard to sustain even tho it makes me feel awesome and gives me the most amount of energy. It’s really strange but the high fat diet makes me feel more calm, I have no mood swings and I can work all day without getting tired. The only downside is that if I eat more then 25g of carbs from other sources than veggies, it kicks me out of Ketosis and I love my fruit! So I decided to give myself low carb days and Keto days to balance it out. Some research shows that cycling these two is really good for spiking up your metabolism, by going back and forth from a fat burning to a carb burning mode.

Carbs: 36.5 g
Net Carbs: 17.4 g
Fat: 139.4 g
Protein: 46.8 g
Note: This is for the entire recipe, not individual portions, which are going to vary depending on both the size and amount you’re going to eat. Just like you wouldn’t consume an entire cake or container of ice cream, you wouldn’t be choking down this entire recipe in one go. Relax, enjoy the treat, and be mindful of your portions.

what is the difference between Low Carb diet and Ketogenic diet?

One of the biggest differences is that on a low carb diet, your body is still taking the energy from glucose. When you are in Ketosis your body is burning fat for energy and your brain is taking energy from fat as well. Research shows that our brain functions a lot better when we are in ketosis. We can survive without carbs but we can’t survive without fat.

Still the Low carb diet is better then the average American diet which is typically loaded with unhealthy carbs that spike our insulin levels and cause diabetes.

Hi Zuzka, thank you for your great recipe!!! How high on fats do you go on the ketogenic days? I am also trying to rotate carbs, but I usually go from high-carb/low fat to low-carb/high fat days. Never tried ketogenic. Low carb days are a horror for me, since I am getting all moody, cranky and hungry =/ But I try to get my carbs only out of veggies and fruits on the high carbs day.

Hi Olenka,
Just a quick reply: the moody/cranky/hungry is not surprising because your body reacts to the change in diet. Ketoers call it the keto-flu, and the symptoms usually go away after a few days to a week. If you rotate every couple of days, your body won’t have time to adjust the low-carb and hence, the symptoms. I suggest reading up on the keto diet from a few excellent sites like ruled.me and the reddit/keto thread. I’m not advocating the ketogenic diet as the best for everyone, but hope to increase knowledge of what it actually is about!

Hey Zuzka, great receipt! Can you explain to me why you are on a low carb diet? All our cells need carbs to function (especially glucose…) I am living the 80/10/10 (raw) vegan lifestyle for about one year now and i am so much more healthy than i ever was, like never sick, tons of energy (so i am working out 6times per week and doing about 20-30 minutes workouts (the shorter ones like the Tabata i am doing 2times ;))and i just feel amazing with lots of fruits giving me endless energy and better slepp. I do not think that a high fat diet (from good fats) is bad but i just want to know why you are doing this like what for differences/benefits you are getting out of it – so curious =)

I make similar nut butter on regular basis, just without the protein powder, which I will try next time 🙂 yey, good tip! Homemade nut butter is the best!

I came out of ketosis over the weekend due to poor meal planning. Trying to recover but I’ve come down with a bug and I feel like I need to load up on Vitamin C.
