Homemade Whole Wheat Tortillas (WEM)

Ingredients:
2 cups whole wheat flour
3 tablespoon olive oil
1 teaspoon salt
2/3 cup warm water
Instructions:
- In a large mixing bowl combine the flour and salt, then add the olive oil, using a fork, mix to combine until clumpy but olive oil is spread throughout the flour.
- Slowly add 1/3 cup warm water at a time, mixing and mashing with a fork until all the water is added.
- Use your hands to mix and kneed the dough until slightly sticky but sticks together in a big ball, add more water is needed (I added an additional tablespoon of water and you might need to also).
- Wrap the dough in saran wrap and let sit in the bowl for 20 minutes.
- Once the dough has sat, portion into either 4 equal balls (for large tortillas) or 8 small balls (for smaller tortillas).
- Roll each ball as flat as possible with a rolling pin then gently stretch each disc (making sure to not tear any holes).
- In a large pan, greased slightly with coconut oil, over medium high heat add each tortilla one at a time for 1 minute on each side.
- Remove from heat and use as you’d like to make sandwich wraps or quesadillas, use your imagination! ๐

ยฟDo you think it would work changing the whole wheat flour with the almond flour or oatmeal flour? :3

it would be interesting to check on other flours. I am trying to go FODMAP , but know that not all flours act the same (more dry, more brittle), so only experimenting will tell.
I will try following flours: buckwheat , rice, chestnut. For sweet tortillas, I could add coconut flour to the mix.

I now go to a Holistic doctor and he gave an FODMAP diet (i honestly didn’t that it was called like that until now ๐ ) and at first is hard but can adapt to it…another thing is to keep that lifestyle, i haven’t gone to the doctor since October and honestly i haven’t being eating as healthy as i was, but anyway you’ll feel and look great eating that way ๐

Have you done an elimination phase and than get groups back into your meals to figure out which food triggers symptoms?
I am nearly half-way through the elimination phase and find it just difficult to remember all things I can or can’t eat…it is not straight forward to remember by heart. I am following the book “IBS, free at last.”

Yes ๐ i know it’s difficult haha my doctor gives me at least 4 pages of indications when i go see him! And i actually did the Master Cleanse Lemonade, what elimination are you doing? or doesn’t your book give you guidelines? I couldn’t eat any animal protein at first and of course no lactose and bread or pastas with gluten..mm also no sugar only stevia, no white rice but i had to eat a lot of brown rice.. i think that’s it, basically eats eating really clean and the less processed foods as you can.
Ah and well, the final results are dairy and gluten do not work for me, unfortunately in Mรฉxico is still a little bit hard to have that life style because everything is hard to find or expensive :/ i’ll get back to it, because i really feel and see myself different, less energy, my hair and skin were better, anyway good luck! Almond flour with egg whites or egg and or little bit of water with seasoning. It comes out like a batter I do it quickly in one dish and pour in pan.
