Honey Lime Quinoa Fruit Salad (WEM)

quinoa fruit salad POST

Ingredients:
1/2 cup cooked quinoa
1/2 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1/2 cup fresh blackberries
1 mango, diced
1 tablespoon fresh basil, chopped
1 lime
1 teaspoon honey

Instructions:

  1. In a small bowl, whisk together the honey and juice from half the lime, set aside.
  2. In a medium size bowl, toss together the quinoa, strawberries, blueberries, blackberries and mango.
  3. Drizzle on the dressing and toss to distribute evenly.
  4. Sprinkle with fresh chopped basil and garnish with the remaining half of lime and enjoy.

    Too good…I would not consider it as WEM…even with so many fruits…quinoa is full of protein…I will try it someday. 🙂
