Keto Cornbread (FM)

Ingredients:
1/2 cup whey protein isolate
1/2 cup oat fiber
1 1/2 baking powder
1/4 cup coconut flour
1/2 cup unsalted butter melted (Kerrygold)
1/3 cup coconut oil melted
4 eggs
1/4 tsp sweet corn extract
1/4 tsp salt
1/4 cup water
Instructions:
- Preheat oven to 350F degrees. Place a greased 10 inch cast iron skillet into the oven while you make the batter.
- Combine all the dry ingredients in a large mixing bowl and mix well.
- Add the wet ingredients and mix until well combined and smooth.
- Pour the batter into the greased and preheated skillet and bake for 22-26 minutes until lightly browned.

Made this today and it was pretty good. I ordered the sweet corn extract and oat fiber from Amazon and could not wait to try it. My sweet corn extract came in a dropper bottle so it was difficult to measure into the tiny measuring spoon and I think I added a bit too much. Nevertheless, this tastes very good and it is similar consistency to corn bread. I melted some butter on top of a piece and dug in, it was delicious. Next I melted a bit of almond butter and drizzled it over the top-Golden! Try it out, you won’t be disappointed.
