Kielbasa and Cabbage - Simple Skillet Meal (FM)

Both kielbasa and cabbage are very popular ingredients in Czech 🙂 This recipe is really easy and delicious, it only take 15 minutes and there is only 1 pot to wash after!
I used the “lite” versions of kielbasa that is made with a combination of turkey, pork and beef. The all-turkey ones are ok too if you prefer!
*This recipe makes 4 servings and the leftover are almost better than when it’s first made 😉
Ingredients:
2 tablespoons olive oil
1 package kielbasa (approx. 1 pound), slice diagonally to get large ovals about 1/4 inch thick
1/2 head of cabbage, chopped in big pieces
1/2 sweet yellow onion, chopped in big pieces
2 large garlic cloves, mined
2 teaspoons rice wine vinegar
2 teaspoons dijon mustard
1 teaspoon Swerve (erithrytol) or Monk Fruit sweetener
salt and pepper to taste
Instructions:
- In a large pan, heat olive oil over medium high heat and add kielbasa. Let cook without stirring about 2 minutes (until browned) then stir and try to flip each slice and let brown on the other side. Remove the kielbasa and plate it on the side.
- In the same pan add the cabbage, onion, garlic, erithrytol, salt and pepper. Cook for 10 minutes, stirring occasionally, until everything is softened and cooked through.
- Lower the heat, add the kielbasa, mustard and vinegar and stir together to mix well. let cook over low heat for 2-3 minutes until warm throughout.
