Lemony Pea Spread on Toast (WEM)

This spread is great to keep in the fridge and add a little something to toast after your workout 🙂
Ingredients:
2 cups frozen peas, thawed
1 garlic clove, minced
1/4 cup fresh parsley
3 tablespoon olive oil
2 tablespoons fresh chopped chives
1/4 teaspoon crushed red pepper flakes
1 lemon, juiced
Instructions:
- In a medium pot over medium heat, add 1 tablespoon of olive oil and add garlic, let roast 1-2 minutes then add the peas and parsley.  Let cook for 3-5 minutes until warm throughout.
- Transfer all the ingredients to a food processor and pulse until it because a coarse paste then transfer to a medium bowl.
- Add the chives, lemon juice, remaining olive oil, chill flakes and salt/ pepper to taste. Â Mix well and spread over a piece of toast and enjoy!
