Low Carb 3 Spice Christmas Cookies (FM)

Ingredients:
2 cups almond flour
1/2 cup avocado oil
1 egg
3/4 cup Swerve (erythritol sweetener)
1/2 tsp baking soda
1 tsp cardamom
1 tsp cinnamon
1/2 tsp ginger
pinch of salt
Powdered Swerve for topping
Instructions:
1. Preheat oven to 350F degrees. Combine all the dry ingredients in a bowl. Mix well.
2. Add the egg and avocado oil and mix with wooden spoon until crumbled dough is created.
3. Use your hands to knead a dough that sticks together. Form the dough into a ball, wrap into a foil and let it firm up in the freezer for about 10 minutes.
4. Place the dough in between two sheets of parchment paper and roll it out into a 1/2 inch thickness. Use your holiday themed cookie cutters to create fun shapes for your cookies. Use up all the dough, and place each cookie carefully on a parchment paper lined baking sheet.
5. Bake in the preheated oven for 10 – 12 minutes. Sprinkle the cookies with powdered Swerve before they cool down. Then let them cool down completely.

You may not have the brand Swerve but it’s basically erythritol. You might find it under different brand name.

I made these but every time I try to bake with erythritol, it never melts. They turn out crunchy. What am I doing wrong? They has good flavor though.

I found that the powdered erythritol works better. When I couldn’t find the powdered I just blended it in my blender. If you’ve ever done this, give it a few minutes to settle or you’ll end up breathing a puff of it when you open the pitcher. Not fun Lol!
