Low Carb Birthday Cheesecake (FM)

Jesse is doing his Ketogenic cleanse so I had to make a low carb keto cake for his birthday. This one has the perfect ratio of crust vs filling and the filling is so smooth (if you follow the instructions below) ย it just melts in your mouth. Great news is that you can have a piece of this delicious cake without worrying about spiking your blood sugar levels and ruining your fitness goals. Unless you’re unable to stick to one reasonable portion of course, then you have a problem ๐Ÿ™‚

Ingredients for the crust:
4 cups blanched almond flour
2/3 cup unsalted butter
7 tbsp Swerve Sweetener (erythritol)
1 1/2 tsp vanilla extract
pinch of salt

Ingredients for the filling:
24 oz full fat cream cheese (Philadelphia)
2 large eggs
13 tbsp Swerve sweetener (powdered)
1 tsp vanilla extract
1/2 tsp lemon extract

Instructions:

  1. Preheat oven to 350F degrees, and grease a 9″ inch springform pan.
  2. Combine almond flour, sweetener, and salt in a bowl, then soften the measured out butter by melting it either on the stove in a small sauce pan or in the microwave for 40 seconds, add vanilla extract and mix in with the almond flour to form the dough.
  3. Press the crumbly dough into the bottom of the greased pan and place it into the preheated oven for 10 minutes. Remove from the oven and let it cool down for another 10 minutes.
  4. In the mean time, soften the measured out cream cheese and then beat the cream cheese with the powdered sweetener in a stand mixer until fluffy. Then add the eggs one by one and finally beat in the vanilla and lemon extract. The batter should be super smooth.
  5. Pour the batter on top of the cooled down crust into the springform pan, ย place into the preheated oven and bake for 45-50 minutes until the center the cake is almost set but it should still jiggle when you take it out of the oven.
  6. Let the cake cool down completely at the room temperature for at least an hour and then refrigerate for at least a few hours before removing from the spring form.
  7. Garnish your cheesecake with unsweetened (or Swerve sweetened) whipped cream, fresh raspberries, and candles of course if you’re celebrating a birthday.

    Mmmmmmm! For a quick cheesecake fix, you could do this as a mug-cake, too, I’ll bet! I do something similar to this with cheesecake (no crust though…I’m not a crust fan! Although almond flour crust sounds DELICIOUS!), throwing the ingredients for a single serving into a mug, then zap it in the microwave for about a minute to a minute and a half. This can be either good or bad — it’s good because you now have only one portion in front of you…but it’s bad because it’s so darn easy that you have to be careful not to go back and make more! ๐Ÿ˜‰

    Ooooooo…now I’m in the mood for cheesecake!!! ๐Ÿ˜€

      Yes I have a few times. I like to do it every once in a while for a short period of time to detox from sugars and let your body use ketones for energy instead.

          I think it’s a great diet to do as a cancer prevention for example that some people do every 3 months or so (cancer can’t survive without sugar), it’s a great detox, it helps with a lot of different illnesses, but it’s also a very strict diet and there’s not much research about the long term effect of ketogenic diet on the body. I really like eating a lot of veggies and fruit which you have to limit somewhat when you’re in keto.

            Thank you for this response, Zuzka. I agree that the ketogenic diet is therapeutic and should be done for specific health concerns or illnesses, and/or for the short term. It mimics starvation (when people use ketones for energy in the absence of sugar), and I’m pretty sure humans aren’t meant to starve year-round. It is a diet that is very low in antioxidants, since one is eating very little vegetables and fruits. It’s missing a lot of the nutrion that we need, and I actually think many of the natural starchy vegetables are necessary in certain quantities, too, to feed the gut flora (resistant starch). I am sad that the Ketogenic and low-carb “fads” are being misunderstood, and as a result people are doing the ketogenic diet unsafely or hating healthy carb-rich plant foods (and saying the word “carb” like it’s the “f” word).

        thank you Z. I made the recipe, it turned out great. Next time I’m gonna make the crust thinner and the top thicker ๐Ÿ˜€ and I put all the slices in the freezer, and when i want one for a snack, i just leave it on the counter for a few hours and it’s ready ๐Ÿ™‚ it’s actually better from the freezer than it was from the fridge. thank you for the awesome recipe!
