Low Carb Breakfast Pumpkin Muffins (FM)

*yields 12 muffins

Ingredients:
1 cup (canned) pumpkin pure (not pumpkin pie filling)
4 eggs
1 tbsp cocoa powder
1/2 cup coconut flour
1/2 tsp cinnamon
1/4 tsp pumpkin pie spice
1/2 tsp baking soda
1/2 cup sugar substitute (I use Swerve)
1/4 tsp vanilla extract
1/4 cup coconut oil

Topping:
1/2 cup heavy cream
3 tbsp swerve (erythritol)
1/8 tsp cinnamon
1/8 tsp pumpkin pie spice

Instructions:

  1. Preheat the oven to 350F degrees.
  2. Add all the ingredients for muffins into a high speed blender and mix until smooth.
  3. Pour the mixture into muffin tray or silicon muffin cups filling them up 3/4 way. You will need 12 of them.
  4. Place the tray into the preheated oven and bake for 45 minutes.
  5. Make a whip cream out of the heavy cream – you can use a high speed blender for that. Then use a decorating bag to cover the top of each muffin in whipped cream and sprinkle the top with the mixture of Swerve, cinnamon and pumpkin pie spice.

    These are so good! It’s hard to only eat one for breakfast. Thank you for all the new low carb treat recipes. Can you do a post of what you typically eat for Thanksgiving and Christmas with family? Do you workout before the meal? We will be staying with my in-laws for Christmas and they do not eat the same as I do. Thanks

    Dear Zuzka, it’s looks jummy….have maybe alternative for pumpkin pie spice? i didn’t see it in germany….

      The one that I have is made with cinnamon, ginger, cloves, and nutmeg. I think adding allspice and cardamom (especially cardomom!!) is delicious.

    Yay, I can do those!
    I can’t find almond flour here (or can make some, my blender isn’t strong enough), so coconut flour recipes are always welcome!

    I made this recipe yesterday! I have to say they are really good. I would provably add less cocoa powder next time so I can have more pumpkin flavors!!
