Low Carb Caramel Brownies (FM)

*yields 8 portions (8 equal size brownies)
Ingredients for the Brownies
1 cup almond flour (not almond meal)
1 1/4 cup unsweetened cocoa powder
4 tbsp erythritol
1/4 tsp baking soda
7 dates pitted
3 large eggs
1/2 cup unrefined coconut oil, melted
1/2 tsp vanilla stevia
1/4 tsp salt
Ingredients for the Caramel Sauce
3/4 cup coconut cream
3/4 cup erythritol
2 tbsp honey
1/4 cup palm shortening
Instructions for the caramel sauce
- In a sauce pan bring the coconut cream, erythritol, and honey to a boil, then reduce to simmer and cook stirring frequently for 10 minutes.
- Allow the sauce to cool down for at least 5 minutes.
- Add the shortening until completely combined and smooth.
- Serve on top of the brownies.
Instructions for the Brownies
- Preheat oven to 350F degrees. Pulse all the dry ingredients in a blender.
- Add the dates, eggs and oil and pulse until well combined into a dough and dates completely shredded.
- Transfer the dough into a greased non-stick 9″ loaf pan. Press it down into the pan into an even layer and smooth out with a spatula.
- Bake in the oven at 350 degrees for 18-22 minutes. Let it cool down for an hour.
- Remove from the loaf pan and then spread and even layer of the caramel sauce on top and cut into 8 even squares. Keep covered in a tupperware so that the brownies don’t dry out. They taste really good when refrigerated or heat up in a microwave.

Not really. You can use butter I guess but that’s not the best for frosting if you’re going to store the brownies in a room temperature. I’m also thinking coconut oil, but I’m not sure how would that change the consistency, texture and taste.

OMG. Is that a FM? I was treating dates as WEM.. I tried palm shortening for the chocolate/peanut butter cookies and while they were awesome the frosting tasted a little tart (totally still yummy). I’ll try coconut oil with these and report back..

Dates would be WEM by themselves but there are only 7 of them with all of the other ingredients, so the ratio is good.

I tried the caramel sauce without the palm shortening and failed miserably – although maybe I wasn’t patient enough.
I added coconut oil instead of palm shortening and it just stayed very liquid for a long time. So, lost patience and added the palm shortening which didn’t help (because too much melted coconut oil?). So I poured the whole thing on the brownie and put in the fridge.
The brownie is To-Die-For – SO good. ..and now it has this coconut oil/ palm shortening coating which is tasty too, but not quite as intended…

Thanks for the update!! I am going to try this weekend! Glad the brownie is good because I have not yet found a “non traditional” brownie that is! I discovered a healthy homemade cheezit recipe so this is a good week !!

I’ve tried a few “healthy” brownie recipes and I think this is the best one. One thing that is great about these is that it is very dense. I have a huge sweet tooth but this brownie really satisfies a sugar/chocolate craving with just a tiny piece (and I didn’t even add the stevia BTW).
Do share the cheezit recipe!

Would you mind to include the macros/calorie per serving or whole receipe for future receipes?
Would be awesome! Could you imagine to set up a “mark as favorite- button” (as you have for the workouts) for us, that we can safe our receipes on our accounts to have them available in any case?
I often think of a receipe, that I have in mind and know, that I have seen it on your website, but then wasn´t able to find it. Such a pity!
