Low Carb Carrot Walnut Cake (FM)

Ingredients
3 cups almond flour
5 large eggs
1/4 cup Algae oil (or coconut oil)
1/2 tsp sea salt
1 tbsp cinnamon
1/2 tsp cardamom
1 tsp baking soda
3/4 cup Swerve sweetener (erythritol)
1 tbsp honey
3 cups grated carrots
1 cup walnuts coarsely chopped
1 cup raisins
Cream cheese frosting
8 oz cream cheese (Philadelphia)
6 tbsp butter
1/3 cup + 2 tbsp powedered Swerve sweetener
1/4 tsp lemon extract
1/2 tsp vanilla extract
Instructions
- Preheat oven to 325F degrees.
- Prepare two 9-inch cake pans and grease them with one tsp of Algae (or coconut oil) and dust with almond flour.
- Combine the almond flour, salt, baking soda, cinnamon, and cardamom in a large bowl.
- In a different bowl whisk the eggs with Swerve and oil.
- Stir the wet ingredients into the almond flour mixture until well combined.
- Fold in the carrots, raisins and walnuts. Then split the batter in half.
- Transfer the batter into each pan and smooth out the top with rubber spatula.
- Bake in the preheated oven for about 55 minutes – or until a pick inserted into the center of the cake comes out clean. Let the cake cool down for an hour, before dress it up with the frosting.
- Prepare the frosting. Add all the ingredients into a high speed blender and mix until smooth. Transfer the mixture into a small sauce pan and allow it to melt over low heat. Don’t let it get to a boil. You want the frosting to be super easy to spread so you don’t ruin the cake.
- Cover the entire top of one cake with the frosting, then place the other cake on top. Spread the rest of the frosting around the whole cake. Sprinkle the top with crushed walnuts. Place the cake into the refrigerator until the frosting hardens. Serve.

Ok, I did this yesterday and it turned out so well, just like anything from Zuzka 🙂 I did not use Swerve though, For whole cake I used just 1 tbsp of honey, cause the carrot was quite sweet and it was so good, even though I was afraid it would not be sweet enough 🙂 Loved this Z, even without the frosting 🙂

I made these into little muffins and cut the recipe in half. Carrot cake is one of my absolute favorites so thank you for this!!
In case this helps anyone: I did not use raisins in the batter. for the topping I decided to omit the butter and use chia seeds instead. I am lactose intolerant so I used a lactose-free cream cheese.
I am looking forward to eating one since I just finished my ZGym workout. 🙂

JUST NOT POSSIBLE !!!!!!
I used coconut oil instead of algae oil, pecans instead of walnuts, dried cranberries instead of raisins and orange extract instead of lemon (I didn’t have any of these).
for the frosting, I started by warming the cream cheese and the butter in a saucepan (avoiding melting them completely), because the vitamix couldn’t blend these ingredients when I tossed them in it while they were still cold. It worked better this way.

haha well you have one powerful blender ! my Vitamix is an Aspire, which I bought in Costco (I understand this model is sold exclusively there).
…maybe the problem was not the blender, but my lack of patience?

I just did this cake as wk3 snack for Shred super food meal plan.
My cake is very crumbly.
I am not sure why!?!?!?!? I triple checked all the ingredients.
I will have to eat it with spoon from the form 🤭
Oh, well, will have to make it again and try to find out why it didn’t stick together…
Any advice? 🤷🏻♀️

It’s been a while since I made the cake but I don’t remember having these issues with it. One thing that might help is adding 1/2 tsp of xanthan gum. It will act as a binder.

I had a look all the ingredients also on website, just to see if Shred SuperFood Meal Plan has something different. But no. I also read the comments and saw that everyone who has made it is totally happy with it.
