Low Carb Cinnamon Coffee Cake (FM)

Cake Ingredients
2 ½ cups blanched almond flour (not almond meal)
¼ teaspoon sea salt
½ teaspoon baking soda
¼ cup coconut oil
½ cup sugar substitute (I use Swerve)
3 large eggs
Topping Ingredients
¼ cup coconut oil, melted
¼ cup Swerve
2 tablespoons ground cinnamon
½ cup sliced almonds
Instructions
- Preheat oven to 35oF degrees.
- In a medium size bowl whisk the eggs, then add the coconut oil, baking soda, salt and whisk again. Add the Swerve and whisk.
- Add the almond flour into the egg mixture and mix with a wooden spoon until well combined and a soft dough is formed.
- Make the topping: add the coconut oil, Swerve and cinnamon into a smaller size bowl and mix well until smooth. Add the sliced almonds and mix well to coat all the almond slices.
- Grease a 9″ round glass baking dish and dust with almond flour. Then press the dough into the dish and spread the topping evenly over the dough.
- Place the dish into the preheated oven and bake for 25-35 minutes. Serve warm or cold with cup of coffee.

When I see a cake with word coffee in the title I expect the coffee to be one of the ingredient. I feel very misled now:) Just kidding. I can see I’m just supposed to eat it with coffee. American recipes are funny sometimes.

I thought the same thing for the longest time, and it STILL throws me off most of the time! LOL! (probably because I loooooove coffee flavored desserts, even though I hate coffee…so I see the word and start thinking it’s going to be one of those! Mmmmmm!)

I love coffee flavoured desserts too. Coffee ice cream mainly. And yes, I fell for the trick more than once too. Not just on this blog but on the internet. Excitedly clicking on a recipe only to find out there is no coffee lol:)

Katarina, I just made the coffee cake and I added some fresh ground espresso in with the topping mixture. It turned out sooooo good.

I’m sure you can but you’ll have to adjust the amount of eggs and oil, because the coconut flour is really dry.

I made with 2 cups of coconut flour and i added 3 cups of water. Baked for a longer time but it taste delicious and very moist. Thanks you. Yum yum
