Low Carb Delicious Breakfast Crepes (FM)

LowCarb_Breakfast_crepes

*yields 2 large or 4 small crepes; macros are based on yielding 2 large crepes

Ingredients:
2 oz cream cheese
1/4 cup heavy cream
2 large eggs
2 tbsp coconut flour
1/4 tsp xanthan gum
3 tbsp powdered sugar substitute (Swerve – I buy it in Whole Foods or at Thrive Market)
2 ย tbsp butter for sautรฉing
1 cup fresh sliced strawberries

Instructions:

  1. Add cream cheese, heavy cream, egg, coconut flour, xanthan gumย and Swerve into a blender and mix until smooth.
  2. Melt 1 tbsp butter in a large pan over medium heat and then pour half of the mixture into the middle of the pan and cover with lid so that the top of the crepe thickens. Flip over when the bottom of the crepes turns brown (not black ๐Ÿ™‚ haha). Remove from pan when the both sides are brown.
  3. Repeat with the other half of the mixture. When you have the crepes on the plate, divide the strawberries evenly over the top. You can sprinkle the strawberries with some Swerve for sweeter taste.

          I’m almost positive there are no dry ingredients missing, but I’ll try this recipe again tonight and just to make sure. Thank you for asking though.

    I had really bad cravings for something sweet and I made these. Really helped! Also had some raisins ๐Ÿ˜€ haha. Now I’m satisfied. I know I probably ate too much anyways but I hope those stuff were better than candy and chocolate =)

    Dear Zuzka and users… you are missing almond flour in this recipe… that is why all users’ recipe turns out like scrambled eggs! LOL. There are no dry ingredientes listed, that is why…

    There are 2 key steps that you need to follow in order to have intact crepes.
    First, you need to pour the composition in a thicker layer, splitting the composition in half it’s a great solution.
    Second, you need to put the lid on while cooking.
    Made them today and managed to have 1 scrambled crepe, 1 thin intact crepe and 1 thick crepe. All tasted really good but the last one looked good as well.
    I didn’t use extra ingredients.
