Low Carb Mixed Berry Cobbler (FM)

* yields two portions

Ingredients for the filling
3 cups mixed frozen berries
3 tbsp Swerve (Erythritol)
1/4 tsp xanthan gum
1 tsp lemon juice

Ingredients for the topping:
2/3 cup almond flour
3 tbsp Swerve
1 tsp lemon zest
2 tbsp butter

Instructions

  1. Add the frozen mixed berries into a medium size pan and turn the heat up to medium. When the berries start to melt, add the Swerve, xanthan gum, and lemon juice and mix well. Turn off the heat and divide the berry mixture equally into two small ramekins.
  2. Preheat oven to 375F degree.
  3. Melt the butter in a microwave safe dish, and then mix with the almond flour, Swerve and lemon zest, until crumbles are formed.
  4. Cover the top of the berries in both ramekins with an equal layer of the almond crumbles.
  5. Place in the preheated oven for about 15 minutes or until you see the tops to turn golden brown.

Carbs: 34.7 g
Net Carbs: 25.7 g
Fat: 30 g
Protein: 9.5 g

    This looks delicious!! Can I please ask why you choose erythritol as your go-to sweetener? I was always kind of afraid of sugar alcohols and things, so I am really curious, since this one seems to be working fantastic for you.

      I can tell u one thing Patricia, there’s no bitter after taste like u get with stevia and other similar sweeteners…can’t even tell it’s not sugar!!

    This looks really good. I have a workout questions for you Zuzka. You have always said that a 15 minute workout a day is sufficient for weightloss and improving strength, tone, flexibility, etc (if done on a consistent basis). I subscribed to your website not too long ago and noticed that on the schedule you have a regular workout plus a power yoga workout and on top of that an additional optional workout for people who want more. Why did you start listing a workout plus a yoga workout for each day. I’m just curious. This is not a negative post. I just want to get the most out of your programs. I don’t have a lot of time. 15 minutes is exactly what I can do each day. And when I see the yoga workouts I feel like I can’t do what I should do…if that makes sense….

      Hello Nadine! I completed one year as Zgym member this month and I began my journey, at the very begining also for weightloss. So, I can talk to you that one workout routine with 15 minutes is sufficient for this goal, because I did this during almost 8 months and I lost 16 kilos at this point.
      After that, I changed my main goal because I wanted more than to lose weight only. I wanted to follow the weekly schedule at Zgym, but I had to improve more my flexibility with Yoga series, and strech more, and calm down more after the intense workouts and daily life routine, otherwise, I couldn’t handle with all the stress of my life.
      How I could do that? I got up to workout at 6am before to go to work and at night, before to go to bed I did one yoga workout or arm challenge workout if I felt myself more stressed without the pressure for lose weight, only for de-stress or challenge me. I began to do that because I wanted to be stronger for handstands, push ups, pull ups and pistols. All of this exercises must to be done with precision, consistency and because of that I needed more time to practice them. If I didn’t had changed my first main goal probably I could to have given up of Zgym because when you change your body without change your mind first you don’t learn the lesson and all your weight will come back.
      I needed to keep pushing myself through my limits and this atitude gave me more confidence and strengh to do all the movements avoiding injury.
      After all of that I gained new habits that changed my life, my mind became so clear and the weightloss goal still alive, but I don’t focus all my energy on this, I prefer to build my muscles to increase the fat burner effect and can do all the exercises of weekly schedule because I know that I will see some changes in my body after this week for sure.
      Ok! You don’t need to do all exercises from the schedule to be fit, but if you have time or if you can do that, why not? You will be so proud of yourself and this type of motivation is priceless!
      Sorry for this answer, but I know what you think at this point because I past this phase and found more happiness now. So keep going! Push through your limits!

        Thank you so much for your detailed reply. I truly appreciate that.
        I have been following Zuzana for such a long time but most of that time I enjoyed watching her workout videos instead of doing them with her. I would start and always stop again. Like you, I have to work out in the morning. Otherwise other things come up and I end up not working out. I get up at 5am. Right now I do one workout from the fat burn series each day. I’m shooting for 5-6 times a week. That’s awesome that you do the yoga workout in the evening. And the yoga workouts have helped you get more flexible?
        How has your diet been since you started doing zgym workouts?
        Do you stick to doing one workout each day….or do you take complete off days?
        Again thank you so much. You are awesome. Not just because of what you wrote for me but because of your mindset, your drive, your goals and your discipline. Much credit to you!!!!!!! I will take your advice to heart. I would love to stay in touch with you to keep myself accountable.

          Hello Nadine! I am sorry for the time to answer, but I was thinking about what I would say to you.
          The fat burn series is amazing!! I did 2x all the serie when I was bored to repeat the workouts with rounds. The Zuzka’s strategy to do 15 different exercises makes the time fly.
          Thank you for your kindness! Now, answering your questions. The kinesealogy approach was the best for improve my flexibility in a short period of time, but I supplemented my diet with vitamins and minerals for joints, bones and to protect my body, too. The Yoga exercises that I like the most are from number #28 above. The type of exercises that I love, because they mix strenching with power yoga.
          My diet is a big concern for me, because I am not so disciplined like I should be. I began eating salads for lunch and dinner with protein (meat, chicken, eggs), but for breakfast I usually eat what I want because of the morning worktous (oats, milk, whole bread, fruit and coffee). The better way to shred my fat was the bulletprof coffee at fast and then I worktout almost 30 min in the morning before having my breakfast. I only eat fruit until the miday, after that I switch the fruit for nuts. I do carb cycling because I love my carbs, but the excess make me sick, so I watch them. I take probiotics and prebiotics for my healthy, I eat gluten, dairy, grains, complex carbs, healthy fats and good protein. I only avoid the processed food. I don’t drink my calories, except water, coffee and sometimes milk.
          As the days began to be longer (due to summer) I decided to do 2 or 3 exercises, because I eat my dinner at 7pm but I only go to bed at 10pm, so I feel hungry and I need to stay active otherwise I eat all the food in my fridge. I don’t like to take complete off days because I feel bad mentaly, so I do 1 exercise with Zuzka like, Strech and Tone or Fit Slide, Yoga or Arm Challenge.

    I made this yesterday for me and my bf and it was sooo yummy, thanks Z! Great recipe!
    The berry filling tastes just like jam, yumm <3 <3

    I used whole wheat flour instead of almond flour and it worked out just fine! I'm not on a low carb diet since I'm a runner and I really need my carbs. Besides, almond flour is really expensive, can't afford that as a student…

    Z, I made this berry cobbler recipe. It calls for 3 tablespoons of Swerve in the filling and 3 tablespoons of swerve in the topping. I use Stevia the kind I have now is Truvia, so it’s erythritol. It’s similar to Swerve, right? The recipe tasted so bad once it was done. It called for WAY too much erythritol. I had to double the recipe and not add any more erythritol and turn my little portions into a pie instead, to save the recipe! i think this recipe should actually call for more like 1 tablespoon of erythritol in the filling and 1 in the topping.

    Is this a mistake in the recipe or is Swerve that much different than the Truvia baking blend that I use? It ended up being so yummy when I added the extra berries and topping to the over-sweetened ones.
