Low Carb Mixed Berry Sour Cream Muffins (FM)

*yields 15 muffins
Ingredients
2 cups almond flour
1/4 cup Swerve (erythritol)
1/2 tsp baking soda
1/2 tsp salt (if you’re using unsalted butter)
2 large eggs
1 cup sour cream
2 tbsp melted unsweetened grass-fed butter (you can also use regular butter, but if you do, don’t add the extra salt)
1 1/2 cups fresh or frozen mixed berries
Instructions:
- Preheat oven to 350F degrees.
- Mix all the dry ingredients in a medium size bowl.
- In another bowl beat the eggs, then add sour cream and melted butter and mix well.
- Pour the wet ingredients into the bowl with dry ingredients and mix until well combined and smooth.
- Add the mixed berries and mix well again so that they’re equally distributed.
- Spoon the batter into the muffin cups filling them about half way. This amount yields about 15 muffins.
- Bake for about 20 minutes or until golden. Let it cool down and serve.

If I am using frozen berries, should I thaw them or let them cook longer from frozen? And, have you tried any other flavorings with this or is it better without? thinking of almond, maple, vanilla, cinnamon etc thx

Everyone’s different. It depends on what is your meal plan for the day, your appetite, your goal in terms of body composition etc. This recipe yields a number of equal portions. I personally eat only one of these portions at a meal.

I just started a raw diet after finding 3 cysts in my left breast and one in my right. I do eat one serving of clean protein a day. Are the workouts to intense for my diet or am I just feeling the difference in calorie intake for the moment? What would you recommend. I am juicing throughout the day while eating fruits for snacks. I eat 2 large salads daily that contains 8-10 veggies and a homemade oil and apple cider vinegar dressing. I also eat raw nuts and seed. My meat protein is usually with dinner and about 1/2 – 1 palm size amount. The guy I am getting my diet from beat stage 4 colon cancer/ His youtube is Chrisbeatcancer.

These muffins are so delish! Definitely a keeper… So far I am loving this meal plan along with the zgym workouts. I am seeing little results already in body definition…starting week two! Yes, I had to try a muffin during my meal prep.

I didn’t have sour cream, so I used Fage 2% plain greek yogurt. It seemed to work fine! Yummy!

What would you recommend instead of the artificial sweetener swerve? I’m guessing that’s what this ingredient is .

I would substitute with coconut sugar and maybe add a few drops of stevia 🙂

Are there any substitutes for erythritol that you recommend? I have heard a lot of negative reviews that it can cause side effects such as diarrhea, headache, and stomachache in some people and/or when consumed in larger or regular doses. My digestion is pretty sensitive and i tend to stray away from all artificial sweeteners. and the erythritol used today is produced by fermenting corn or wheat.

Erythritol is the second most well tolerated sweetener – sugar substitute that doesn’t spike blood sugar levels. Xylitol has been more often connected to digestive discomfort, erythritol is more gentle, however some people still might experience issues. The number one sweetener is Stevia – it might actually even have some health benefits.
