Low Carb Mocha Frappuccino (FM)

Ingredients
1 1/4 cup ice
3/4 cup brewed medium roast coffee
1 tbsp unsweetened cocoa powder (Ghirardelli)
1 tbsp Swerve (sugar substitute)
1/4 cup whipped coconut cream
dash of cinnamon
___________________

Instructions

  1. Add ice, coffee, Swerve and cocoa powder into a high performance blender and blend until the ice is crushed into a slush.
  2. Pour the coffee slush into a glass and top with whipped coconut cream. Sprinkle with ground cinnamon. Drink before it melts!

How to make a whipped coconut cream

  1. Refrigerate a metal bowl and a can of coconut milk for a few hours. You can also place both into a freezer for about 15 minutes if you don’t want to wait.
  2. Pour the thickened part of the chilled coconut milk into the cool metal bowl and whisk until you create a cream. Don’t expect it to be as thick as a regular dairy whipped cream, just thick enough to sit on top of the frappuccino.

I went for a dental surgery a few days ago so I spent my entire weekend in and out of pain eating just liquid or mashed food. I did this frappuccino to cheer myself and it worked! 🙂 I love these simple joys of life…

    You recover and don’t stress over not working out. You know if you need someone to do a video of a workout you have probably a million women followers who would have no problem doing a video. 😀

    Instead of adding ice you could also put the coffee into an ice tray and use that for both. No watered down taste. That’s what I do for my protein drinks, I freeze the fruit.

      I do that too. I also freeze almond milk to add to my coffee or smoothies.

    Yummm… Trader Joe’s now has little bottles of concentrated liquid coffee that you mix with milk and it’s delicious, I wonder the outcome of using it in this recipe :p
