Low Carb Pancakes with Blueberries (FM)

*Makes 2 Portions

Ingredients:
2 ounces cream cheese
2 large eggs
2 tbsp erythritol (Swerve Sweetener)
1 scoop vanilla whey protein powder – about 28g (maximum 6g carbs)
2/3 cup almond flour
3 tbsp coconut oil
pinch of salt

Blueberry sauce:
1 tsp coconut oil
1/4 cup frozen blueberries, thawed
1 tbsp Swerve sweetener
2 tbsp whipped cream (you can make your own with a blender. Pour a 1/4 cup of heavy cream into a blender and blend on high until whipped, keep the leftovers in a closed jar in the fridge for up to 3 days)

Instructions:

  1. Add the cream cheese, eggs, Swerve, protein powder, almond flour, and salt into a high speed blender and blend until smooth batter is created.
  2. In a medium skillet, heat 1 tablespoon of the coconut oil over medium-high heat. Pour 1/4 cup batter in the middle of the hot skillet (the oil should sizzle when you add the batter). Move the skillet gently around until the batter spreads into about a 3-inch circle.
  3. Cover and cook until brown, about 1 minute 30 seconds. Uncover and flip the pancake. Cover and cook until brown, 30 to 40 seconds. Repeat until you use all of the batter, adding the remaining coconut oil as needed.
  4. When the pancakes are done, make the blueberry sauce: Add the blueberries and coconut oil to the hot skillet. Sprinkle Swerve over the top, and cook over medium-high heat, stirring frequently until the blueberries are warm. 3 to 4 minutes.
  5. Pour the blueberry sauce over the pancakes and top with the whipped cream. Serve right away.

Carbs: 14.5 g
Net Carbs: 9.6 g
Fat: 58.1 g
Protein: 29.1 g

    Hi! I love this recipe but I have a question-do you use Regular cream cheese for this recipe? Do you provide nutritional information with the recipes if I purchase the meal plan?

      In Zuzka’s Meal Plan she does not show actual ” Nutritional” Information. She has a PDF book where nutrition is a chapter and discusses about not counting calories, macros, etc since you’re eating whole, nutritious foods. 🙂

        Is it definitely 1 serving? I guess it depends on the individual, but with 2/3 c. almond flour and 3 TB of coconut oil (in addition to the other ingredients) it seems like a lot. On the other hand, if it IS one serving – yay! 🙂

          Oh I was just guessing, I don’t know for sure :)) and yup, it always depends on the individual, but Z should add this fact to all the recipes, otherwise we will all be guessing 🙂

    My batter was really thick, so I ended up adding about 1/2-3/4 cup of almond milk (unsweetened) and then they came out great! 🙂

    I also have a doubt about the serving! if it is just one serving it’s definitely a bomb in terms of calories !! euh?!

      I follow her meal plan, and it says there that this recipe makes 5 pancakes and to divide them for 2 breakfasts (2 each) and the 5th one for a snack. I hope that helps. 😀

          You’re welcome! Pay attention to the ‘summary’ of the day, the section where it shows the 3 meals for each day with the pictures, under each title it says exactly how many portions, when to eat them and the info you need to know about that certain meal. I didn’t notice those details at first either.

    My batter turns out to be extremely sticky and chunky, even if I try to blend it… Does anyone else have this issue? Or is that the way the consistency is supposed to be (though I wouldn’t call it smooth)?
    It was the same with the sour cream blueberry muffins (Z-Shred Meal Plan). Maybe it’s the type of almond flour I am using…

    I love it!
    I would to eat them all, at first time I even did 🙈 than i‘ve read this issue and been starting to exercise all day long))) with „rain won’t stop me!“ … was sooo sweaty like i’ve been standing in the pouring rain.. thank you Zuzka, jsi jednicka!
