Recipes | July 08, 2016

LowCarb_pretzels

*Yields 5 pretzels

Ingredients
3 eggs
1 1/2 cup almond flour
3 tbsp coconut flour
1 tbsp coconut oil
1/2 tsp salt

Instructions

  1. Preheat oven to 400F, and grease a cookie sheet with some butter or coconut oil.
  2. Mix the almond flour with coconut oil, and salt. Then beat 2 (yes, 2) eggs and add them to the almond four. Add in one tbsp of coconut flour, mix well and allow to sit for about a minute.
  3. Add the 2 remaining tbsp of coconut flour mix well and let the dough sit for about 5 minutes.
  4. Divide the dough into 5 same size balls. Start rolling each ball into a pencil like shape so that you can create a shape of a pretzel or a heart. Have fun with different shapes!
  5. Lift the shaped dough carefully and transfer onto the greased cookie sheet.
  6. Bake in the oven for 10 minutes, beat the last egg and carefully brush the tops of the pretzels, and sprinkle with coarse salt.
  7. Bake for another 5 minutes until golden brown on top.

These came out so tasty. I really like them, and I love savory treats like this. I wouldn’t say it tastes EXACTLY like a traditional pretzel, but it’s delicious and satisfies my salty tooth. 🙂 It was also extremely quick and easy to make! That is really important to be with my schedule. Yum, thanks Zuzka.

Where do you buy your almond flour? Is there a particular brand that you like to use? How do you store it? (Thank you in advance :))

I made these last night and really really enjoyed them! I plan to enjoy leftovers tonight! Do you store in room temp or in fridge?
