Low Carb Pretzels (FM)

Recipes | July 08, 2016

LowCarb_pretzels

*Yields 5 pretzels

Ingredients
3 eggs
1 1/2 cup almond flour
3 tbsp coconut flour
1 tbsp coconut oil
1/2 tsp salt

Instructions

  1. Preheat oven to 400F, and grease a cookie sheet with some butter or coconut oil.
  2. Mix the almond flour with coconut oil, and salt. Then beat 2 (yes, 2) eggs and add them to the almond four. Add in one tbsp of coconut flour, mix well and allow to sit for about a minute.
  3. Add the 2 remaining tbsp of coconut flour mix well and let the dough sit for about 5 minutes.
  4. Divide the dough into 5 same size balls. Start rolling each ball into a pencil like shape so that you can create a shape of a pretzel or a heart. Have fun with different shapes!
  5. Lift the shaped dough carefully and transfer onto the greased cookie sheet.
  6. Bake in the oven for 10 minutes, beat the last egg and carefully brush the tops of the pretzels, and sprinkle with coarse salt.
  7. Bake for another 5 minutes until golden brown on top.

Mmmm, love this idea! Especially because I’m a sucker for salty snacks rather than sweets. Will be trying these sometime this week!

My boys favorite thing to do when we go to the mall is get a soft pretzel. I don’t eat them but would love to try these! I even have all the ingredients so I’ll try later today.

So nice Zu but I am wondering if someday you will share a recipe using any other flour than almond! This one is very costly and difficult to find. Few recipes with peanut, amaranth, quinoa and chickpea flour would be amazing! 😀 Thanks!

Nice idea – thanks for asking that.
We who have little resources to buy from in the middle of nowhere want the good stuff but usually have to use substitutes.

Almond flour IS expensive. :-/ I’m sure you could replace the almond flour with another flour you have. I believe the only reason she uses that one more often is because it’s low carb.

Hi Nia…yes I agree it is expensive! But we can not use another flour because consistency will not be same. I guess we can use peanut or walnut flour but we will have to crush it in food processor to make it thinner. Anyways we can always try to replace but no guarantee recipe will be good. See you, take care.

Hi Stanislava, yes I can make it at home but it is required a nice grinder what I do not have, also the almonds itself are costly. I almond flour has carbs also like all other flours. See you, take care.

Hi i know you find carbs in most food but compare 100 grams of white flour = 76 gr carbs/2.7 fiber = 73.3 net.carbs wholemeal flour=72 garbs/11 fiber=61 net carbs and almond flouer=22 carbs 12 fiber =10 nat.carbs that is big different i know almonds are costly i buy them in bulk on sale and you use lest of it then normal flour.
never mindi just try explain and help.

God I love pretzels! I must try this recipe. I have slacking off on my diet and eating too many carbs. I blame sitting at the bar watching the Euro Cup. 🙂 I think these pretzels will ease me back into low carb.

Has anyone else made these? I tried to make them and they are too crumbly to make into pretzels. however, I just made them into pretzel nuggets!

Did you both use almond meal or almond flour? I used almond flour and my dough came out uniform and soft, not crumbly. I found that rolling it with melted coconut oil also made it easier to shape/form.
