Low Carb Protein Pancakes (FM)

FM stands for free meal – which means it’s low in carbs and you don’t have to earn it with a workout.
Ingredients:
1 cup of Unsweetened Almond milk
1/2 tsp of vanilla extract
1/4 cup almond flour
1/4 cup coconut flour
1 whole egg
1 scoop of vanilla protein powder (pick one that has only 2g of carbs in serving – one serving is typically 40g)
1 pinch of sea salt or himalayan salt
2 tblsp of Choc Zero maple syrup (sugar free, natural sweetener)
Coconut oil for frying
Instructions:
- Crack the egg and whisk it well with a pinch of salt, vanilla extract, and maple syrup.
- Mix in the cup of almond milk and then start adding the almond flour, protein powder, and coconut flour in batches while keep mixing it to create a batter. The batter should be on a thicker side but you should be able to pour it onto a frying pan. If you can’t pour the batter, it’s probably too thick and you need to add more almond milk.
- Heat up a tblsp of coconut oil in a small frying pan medium/high and pour a ladle of the batter in the middle of the pan. It should be about the size of the palm of your hand. Try to make it into a round circle.
- It’s easy to burn these because they cook really fast – flip them in about 30 – 40 seconds or as soon as you see the bottom to become brown. It’s ok to tear them into smaller pieces, because it still going to be delicious.
- You can add some frozen blueberries into the pan, and warm them up.
- Put the pieces of your pancakes on a plate top with the warm blueberries and drizzle with little bit of your sugar free maple syrup.

Great recipe Z sounds amazing. You say honey is pure sugar and other than coming from nature it has no health benefits, I put 1 tbsp of honey in my coffee every morning and usually 1 tsp in my tea at night. Would it be better if I used a sweetener like stevia in my coffee instead of honey? (I sometimes drink 2 or 3 cups of coffee a day)

Delizioso!! Zuzka that’s going to be my breakfast tomorrow, I’ll use almond Fluor(only because i already have it) I do have yacon syrup which you can buy on line or health food store, I did not find it at whole foods..yum can’t wait. Grazie, take care. Ciao Angelina

thanks for this recipe, Iove sweet breakfasts. Now my question is: Is this the recipe for 1 portion? Because right now I’m trying to start eating by portion sizes (as I really have no control over how much I eat) and I find it really hard in this case. Can you (or someone) help me out?
