Low Carb Protein Pancakes (FM)
Recipes | March 13, 2014
FM stands for free meal – which means it’s low in carbs and you don’t have to earn it with a workout.
Ingredients:
1 cup of Unsweetened Almond milk
1/2 tsp of vanilla extract
1/4 cup almond flour
1/4 cup coconut flour
1 whole egg
1 scoop of vanilla protein powder (pick one that has only 2g of carbs in serving – one serving is typically 40g)
1 pinch of sea salt or himalayan salt
2 tblsp of Choc Zero maple syrup (sugar free, natural sweetener)
Coconut oil for frying
Instructions:
- Crack the egg and whisk it well with a pinch of salt, vanilla extract, and maple syrup.
- Mix in the cup of almond milk and then start adding the almond flour, protein powder, and coconut flour in batches while keep mixing it to create a batter. The batter should be on a thicker side but you should be able to pour it onto a frying pan. If you can’t pour the batter, it’s probably too thick and you need to add more almond milk.
- Heat up a tblsp of coconut oil in a small frying pan medium/high and pour a ladle of the batter in the middle of the pan. It should be about the size of the palm of your hand. Try to make it into a round circle.
- It’s easy to burn these because they cook really fast – flip them in about 30 – 40 seconds or as soon as you see the bottom to become brown. It’s ok to tear them into smaller pieces, because it still going to be delicious.
- You can add some frozen blueberries into the pan, and warm them up.
- Put the pieces of your pancakes on a plate top with the warm blueberries and drizzle with little bit of your sugar free maple syrup.

Is amazing how the native meals from américa are still among the best nutrient supplier and good taste too, i am talking about vanilla and agave. I recommend you search about the organic native making of chocolate from some Mexican states, like Oaxaca if you want add it to your recipes, in ancient times, they did not use beef or pork lard and sugar as they do currently. 🙂

I also recommend you the seaweed spirulina.

Very expensive ingredients, should call them over budget pancakes. Delicious no doubt tough.

Well I eat healthy and I don’t have coconut flour in my kitchen, neither yacon syrup… not to mention the maple syrup which is insanely expensive over here… but anyway with some little changes it could be as delicious and healthy as the original recipe! thanks, Zuzka 🙂

I usually make almond milk at home. It has two benefits: you have an almond milk and as a result you have also an almond meal.))

Hi Zuzka, I’ve seen a lot of people on fb questioning/lecturing you about the diet change. I just wanted to share something you might find interesting – it’s an hour long lecture (don’t worry, it’s actually pretty entertaining!) all based on current peer-reviewed journal articles, and it offers support for a more plant-based diet. I won’t post the link because I’m never sure if that’s allowed in the comments, but it’s called “Uprooting the Leading Causes of Death”. If you like the lecture, it’s from nutritionfacts, which posts daily short videos (just a few minutes) on all sorts of nutrition related topics, again all based on up to date peer-reviewed literature. I hope you watch the lecture, it can be life-changing and it is so fascinating. There is a “sequel” called “More than an Apple a Day: Preventing Our Most Common Diseases”. Also very very much worth watching. Good luck on your new diet journey. All the best.

Yep, great video. I think you should not worry about what’s allowed in the comments, it seems that no one reads them anyway… :-

Hi Zuzka,
I think its great that you are trying something new and possibly out of your comfort zone. I am not a red meat eater or pork. I stick to an all organic diet of chicken, turkey, fish and eggs as my protein sources and follow a very healthy lifestyle of exercise and good whole nutrition, however I am always looking for that “something better”. About a month ago I picked up a Vegan magazine with a female and male vegan bodybuilders on the cover. I thought WOW they have a glow of total health radiating from the page. I wanted that glow. I started alternating eating totally vegan every other day. It was tough and I felt hungry on those days, but I got through them. I try to continue this pattern and so far so good. I haven’t seen major changes and I need to mention that it is a costly choice and time consuming. I found an excellent website http://www.drweil.com that I thought you might enjoy watching. He has great vegetarian recipes as well as a lot of meditation articles and exercises. Love your site and all the positive things you are doing for yourself as well as others.
