Low Carb Simple Brownies (FM)

*yields a lot of portions – I’ve had these for like a week and a half. I kept them in the fridge and warmed them up every morning for breakfast. Their really delicious.

Ingredients:
1 1/2 cup almond flour
3/4 cup Swerve
3/4 cup unsweetened cocoa powder
1 cup cream cheese
1/4 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
Non stick coconut oil spray (or butter)

Instructions:

  1. Preheat the oven to 350F
  2. Spray a small baking sheet with the coconut oil spray (or grease it with butter).
  3. In a medium size bowl mix the almond flour, swerve, cocoa powder, baking powder, and salt. Then add the vanilla extract and mix.
  4. Add the cream cheese and use your hands to work it into the almond flour mixture until you form a dough.
  5. Press the dough into the greased baking sheet. Your brownies should be about an inch tall.
  6. Bake in the preheated oven for about 18 minutes. The dough will be still very soft when you take it out of the oven, so you have to let it cool down before you start slicing.

Note: This is for the entire recipe,ย not individual portions, which are going to vary depending on both the size and amount you’re going to eat. Just like you wouldn’t consume an entire cake or container of ice cream, you wouldn’t be choking down this entire recipe in one go. Relax, enjoy the treat, and be mindful of your portions.

    I have quite a trouble forming the dough, it’s not sticking together. What may be the issue?

      I’m having the same problem. After mixing all ingredients my “dough” is still basically powder. Anyone have any ideas?

        Hey,do you have any solution by now? I want to try these but I have had so many receipes from here with exactly the same problem that I dont want to stay there with all the ingredients and a lot of hunger and a soft “dough”.. again ๐Ÿ™‚

          I softened the cream cheese in the microwave and that helped with the forming of the dough.

          I just keep mixing and mixing with my hands and eventually it turns in a mixed ball ๐Ÿ˜Š Hope you were able to figure it out, they are yummy!

            Just from reading the recepie I was thinking “wow, these might come out quite dry”.
            I’m thinking about maybe adding an egg to the mixture. The water from the egg together with the proteins should make it stick together better, both as a dough and as a finished brownie.
            Someone further down mentioned adding peanut butter, might work as well. It adds more liquid on form of fat and gooiness. And adds a caramelish taste to the brownie.

          I made these today and just had to keep mixing the dough with my hands. To cool it off quicker afterwards I put in the deep freeze, I added a few drops of peppermnt oil.

    Hello Zuzka! I’m from Malta, and I can’t found almond flour from no where!! ๐Ÿ˜‘ You use it quite alot… Maybe I can replace it with a different healthy flour?

    I made these last night but they are very crumbly. Not quite as brownie-like as Zuzka’s photo. Anyone else have that issue? Regardless, they are delicious! I just do not have perfect squares with crunchy edges. haha

    I have a personal recipe that I came up with a while ago for healthy brownies and omg… they are amazing! I bet these need a couple eggs added to help with the crumbly issue. And I add almond butter and coconut butter instead of cream cheese. So good!

    OMG!!! Absolutely scrumptious! I added one egg, but if you let the cream cheese set to room temp, you really donโ€™t have to. I added Lillyโ€™s stevia sweetened dark chocolate chips to the batter, and the result was AMAZING!!!!
