Low Carb Simple Brownies (FM)

*yields a lot of portions – I’ve had these for like a week and a half. I kept them in the fridge and warmed them up every morning for breakfast. Their really delicious.
Ingredients:
1 1/2 cup almond flour
3/4 cup Swerve
3/4 cup unsweetened cocoa powder
1 cup cream cheese
1/4 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
Non stick coconut oil spray (or butter)
Instructions:
- Preheat the oven to 350F
- Spray a small baking sheet with the coconut oil spray (or grease it with butter).
- In a medium size bowl mix the almond flour, swerve, cocoa powder, baking powder, and salt. Then add the vanilla extract and mix.
- Add the cream cheese and use your hands to work it into the almond flour mixture until you form a dough.
- Press the dough into the greased baking sheet. Your brownies should be about an inch tall.
- Bake in the preheated oven for about 18 minutes. The dough will be still very soft when you take it out of the oven, so you have to let it cool down before you start slicing.

Carbs: 79.4 g
Net Carbs: 36.8 g
Fat: 162 g
Protein: 64.7 g
Note: This is for the entire recipe, not individual portions, which are going to vary depending on both the size and amount you’re going to eat. Just like you wouldn’t consume an entire cake or container of ice cream, you wouldn’t be choking down this entire recipe in one go. Relax, enjoy the treat, and be mindful of your portions.

For now, you can get a page 2, 3, 4 type list if you click one of the category links at the top. We don’t have a main list for all posts, but each category should currently have its own paged list.

For anyone counting calories I just figured it out in My fitness pal that for 10 servings it’s 194 calories, 17.5 f, 8.7 c, 6.2 p… I only did that so I could figure out what a good enough serving would be… I have a tendency to overeat the yummy things! Thank you for this recipe. I just joined your site the other day and I’m constantly sore (a good sore haha) trying to learn to eat more by the way you’re teaching… Been counting calories for so long so it’s a little bit of a transition! However I think it’s definitely more enjoyable! Thank you again so much for this! :0)

I know it’s going to be different for you, but it’s good different. I know many people who are the experts (like yourself) in counting calories, but having a hard time listening to their own body because they rely way too much on the outer data. It’s good to be aware of how many calories you approximately consume but it’s also very important to re-connect to your body intelligence, slow down and just listen. Glad you’re enjoying the workouts 🙂

I find swerve to have an after taste but erythritol does not. For this those of you who have a sensitive palate maybe substitute with just erythritol. Also try this FLOURLESS BROWNIE RECIPE
4 eggs
1/4 cup ghee or melted grass fed butter
3/4 cup cocoa powder
1/2 cup powdered erythritol (just put regular granule erythritol in blender until powdered)
2 tsp pure vanilla
pinch of salt to bring out chocolate flavour
preheat oven 350
Mix with hand held mixer until combined and velvety smooth
Put in an 8×4 greased loaf pan and bake for 30 minutes
It may appear still moist in the middle but that’s how it should look
Let sit in loaf pan for 2 hours on counter before removing as it will be too moist to remove right away
These are very moist and yummy!!!!!

That is super smart! I bought the swerve granulated not knowing so am gonna put that in blender until powdered!! Also sure would work for almond meal ( got wrong one of that too!!!) made pretzels from z with the meal not so good as it would of been w flour or blended meal! Thank you for this!!!!

that’s great!!!!!! I also have this awesome recipe for chocolate pie that is the best I have ever made. I do love my chocolate but also watch the calories and fat. There is a secret ingredient to this pie that fools everyone. Let me know if you want the recipe as I don’t mind sharing in this forum. And hope it’s ok with Zuzka of course

Haven’t made brownies in a long time. I did make some healthy banana dark chocolate chip muffins 2 days ago that came out fabulous. Anyway, Zuzka this recipe is so simple and I must try it. I have searched for Swerve locally but HEB Plus doesn’t carry it. Apparently they have it at Whole Foods which is only 25 minutes away so I’m thinking about heading there tomorrow. I have been using baking Stevia in the Raw but I have to use a little Sugar in the Raw in stuff or it has too much of the aftertaste. I don’t mind the taste but my husband dislikes it a lot. Have a great weekend. I’m going to go float the river after lunch. 🙂

Thanks, Cari. I just signed up for Amazon Prime trial the other day. I’ve seen it on there just haven’t ordered yet. I’m making a dessert tomorrow for national cheesecake day and I ran out of stevia making muffins. If I like it I will order it the next time. I’m guessing it has a better taste.

I understand as I felt that way too, but I am pretty happy with it. BTW Sprouts has swerve too, but I don’t know if you’re close to a Sprouts. I also go to Whole Foods as well. I love the river and glad you’ve enjoyed it, especially since it’s so hot here in Texas!

That’s a good idea, Zuzka. I’ll definitely buy more than one. I do that with other things as well. I don’t live in a big city but whatever store I need to go to seems like a chore and a pain. Our stores are always so dang busy. I’ve tried going at different times on different days. I swear everyone else was trying to do the same thing because busy, busy, busy. Lol!

Hi, girls and Zuzka!
Thank you, Zuzka, for sharing your low-carb brownie recipe! I also have something to share. I found this one online, gave it my own twist, and it’s just pure amazing CHEEWY goodness. It’s so moist, but you have to remember that since erythritol is not attracted to moisture, it will make all the flourless recipes very spongy. At first it will not look like a brownie and when it’s still warm out of the oven, it will feel more like a chocolate sponge cake. But! Hold on! Put this guy in a fridge overnight. If you like your brownies cold with hot coffee, like me, you’ll LOVE this one. It will seriously become heavier, the entire chocolate moisture that the sweetener didn’t bind to, will kind of soak in the middle. It literally tastes like double chocolate brownie, but out of the fridge it’s like a chocolate fudge! Sooo good!
6 Tbsp (90 ml) coconut oil
6 oz. (170g) sugar-free semisweet chocolate chips (I used Hershey’s)
2 large eggs, room temperature
2/3 cup (130 g) Swerve
2 tsp vanilla extract
1/4 cup (20 g) unsweetened cocoa powder
1/4 tsp xanthan gum
1/4 tsp salt
Preheat the oven to 350F.
In a small pot, melt together coconut oil and chocolate chips until they fully incorporated. Take it off the heat and let it cool slightly.
In a mixing bowl, mix together the eggs, swerve, and vanilla until combined. Add the melted chocolate mixture made before and mix until everything is smooth and blended. After that, add the cocoa powder, xanthan gum, and salt. Mix again to combine.
Bake for about 25-30 minutes or until a toothpick comes out clean when you check. You might want to leave it slightly moist in the middle. Take it out of the oven and let cool completely. Put in the fridge overnight and enjoy the heavenly chewy goodness in the morning!**
**You can, of course, serve it after 15 minutes, but since it’s flourless, it will be more like a chocolate sponge cake. Still ridiculously delicious, so, like they say- different strokes for different folks! 😀

I used kind of an odd shaped pan 11×7 but you could use any size around that and just get 10 servings from it or whatever!! It’s awesome cause usually after eating a normal sugary brownie I feel like I want more and more… With this one I was satisfied with one and didn’t have an urge to eat for a very long time! Definitely helps with the sweet tooth! Lol

Lmao I just took my first batch out the oven and twidlling my thumbs impatiently waiting for it to cool down so we can give the final result a test. But it already has a massive thumbs up from myself and rhe bpyfriend. The dough almost didn’t make it into the oven and we were both having little tastes of the dough as I was teansfering it into the baking tray. 😄
