No Bake Kiwi Pie (WEM)

Filling:
2 tsp ginger, minced
2 tsp lime juice
1 tbsp finely chopped mint
1/2 cup marscarpone cheese
1/4 cup swerve granulated
Crust:
1 cup cashews
1 cup walnuts
1 cup dates
1 cup oats
Topping:
sliced kiwi
coconut flakes
fresh mint
Instructions:
1. Add all the ingredients for crust into a food processor and blend on high until you get a crumbled dough. Press the dough into a 9 1/2” pie dish.
2. Add all the ingredients for the filling in a bowl and whisk with a fork until smooth and well combined. Spread the topping across the crust into an even layer leaving about a 1/2 inch space around the edges.
3. Top it up with slices of fresh kiwi, coconut flakes and fresh mint.

Yay!!! Kiwis are in season here in Central California! This recipe sounds AMAZING!!! I LOVE the use of the mascarpone and herbs (I’m of Italian descent 👍🏽). And the crust sounds incredible. I bet those cashews taste amazing with the creamy mascarpone, and I imagine the creamy elements of this dish complement the tangy, sweet kiwis. I’m definitely making this for Christmas with local kiwis from farmers market. Thanks!!
