No Bake Low Carb Mixed Berry Chocolate Cashew Bar (FM)

*Makes 9 small bars
Ingredients for the base:
1 1/2 cup cashews
1/4 cup coconut oil (melted)
1/4 tsp kosher salt
1/4 cup mixed berry jam*
2 tbsp Swerve (erythritol)
*Ingredients for the Mixed Berry Jam
2 cups frozen or fresh mixed berries
1/3 cup coconut cream (chill a can of coconut milk in the fridge and then use the thick part of the milk)
3 tbsp Swerve (erythritol)
1/4 tsp xanthan gum
Keep the left overs in the fridge and use on your breakfast crepes.
Ingredients for chocolate:
1/2 cup coconut manna
2 tbsp coconut oil (melted)
2 tbsp unsweetened cocoa powder
3 tbsp Swerve (erythritol)
Instructions
- Pulse the cashews with salt in a food processor until you get crumbs.
- Add the oil, jam and Swerve and mix until you get a dough.
- Press the dough into a smaller size baking dish or a tray so that you can form a half inch thick base for the bars.
- Mix the ingredients for chocolate in a bowl until completely smooth and then pour the chocolate over the top of the base and spread in an even layer.
- You can sprinkle the top with unsweetened coconut flakes and then place the tray in the freezer.
- Once the dough hardens, you can cut it into 9 smaller bars and keep them in the fridge for snack.

Carbs: 10.9 g
Net Carbs: 7.7 g
Fat: 24.2 g
Protein: 5.1 g

Magda, I looked at her crepe recipe, and the mixed berry jam are similar
It says in the crepe recipe to do the following:
1. Start with the berry jelly. Add the berries in a small sauce pan with coconut milk and bring to boil. Add the Swerve and xanthan gum and mix well. Turn down the heat and stir for about 2 minutes. Set aside and let it cool down while you prepare the crepes

anyone knows what can I use to substitute swerve in all these recipes? I only got stevia powder, gave nectar and xylitol (swerve hasn’t reached this corner of the world yet).

I didn’t care for these. The jam was delicious but it didn’t sit well when combined with the chocolate topping. I wouldn’t combine jelly with chocolate. I will definitely make the jam again though!
