No Bake, Low Sugar, Low Carb Pudding Pie (FM)

*This recipe makes 8 servings – each is about 324 calories so if you’re goal is weight loss be mindful of how often you enjoy this dessert

Ingredients:
1 1/2 cup almond flour
half a stick of butter (4 tablespoons), melted
1/4 cup Monk Fruit or Swerve (erythritol) sweetener
coconut oil
4 ripe avocadoes
8 tablespoons unsweetened cocoa powder
1 1/2 cup almond milk
6 tablespoon Choc Zero Maple Syrup
2 tablespoon Monk Fruit or Swerve (erythritol) sweetener
sprinkle of unsweetened coconut flakes (optional)

Instructions:

  1. make the pie crust by mixing the melted butter with the erithrytol in a small bowl, then pouring into the almond flour in a medium sized mixing bowl and blending well. ย I just used my hands ๐Ÿ™‚
  2. use a little coconut oil to grease a pie dish then evenly distribute the curst mixย using your hands to press it firmly into the bottom and shape with your fingers, place in refrigerator for 20 minutes.
  3. in a blender (I used my vitamix) add the avocado, cocoa powder, almond milk, 2 tablespoon erithrytol and the agave, mix well until it become a smooth pudding consistency.
  4. spread the pudding mix evenly into the pie crust (you’ll have about a cup extra leftover that you can enjoy as a snack later in the week, just slice some strawberries or maybe some sugar free whip cream)
  5. let the pie set in the fridge for an hour then slice and enjoy with some sprinkled unsweetened coconut flakes.

    yummy, something for me ๐Ÿ™‚ One question though- can I use erithrytol instead of agave when making the pudding?

      You can, but it might be a little grainy. You can also throw the erythritol into a blender on high prior to using it to make it into a powder. That way it won’t be too crunchy.

        Also they sell Swerve Confectioners sugar (e.g on Amazon) – maybe it would be less grainy?

    Also keep in mind that erithrytol is also used as a vasodilator (lowers bloodpressure). So as with all things – enjoy in moderation.

      Vasodilators prevent dilation of blood vessels and do not thin blood.

        You’re half right Chris. Vasodilators do not thin blood, but open (dilate) blood vessels. (mayoclinic.org)

          I must have just been a contrarian there because I actually do know what Vasodilators and dilate means and you are right. Opening up not stopping. Thank you for the correction.:-)

    This might also work well with silken Tofu instead of Avocado. To have less fast, high Protein Version. ๐Ÿ™‚

    hi Zuzka is it possible for the team to put all your recipe Videos in one spot and have that as a sub category for those of us who really struggle while cooking and could use the guidance of hands on. I know how much it would help me and hope it is possible. I am very very nervous to try this as i cant bake well I just started about two years ago and can not yet make a chocolate cake. lol
    Supper, no problem, super easy with real meals.
    I will try this when I work up the courage and put together all the ingredients, Thanx so much for all you’ve done and shared with us so far . You are very creative, I am blessed to have found you in all the 8 billion here, lol!!

      I don’t have that many recipe videos though. And what are you afraid off? ๐Ÿ™‚ you can only learn if you allow yourself to mess up. You think I knew how to cook and bake when I started making these recipes? ๐Ÿ™‚ I was just willing to try and when I messed up, I tried again with a different approach. No one will judge you if you mess up ๐Ÿ™‚

        ps, if it is possible if I get time i will try and put them in a folder of favorites. only for my own comfort level until I get better, I don’t like wasting food like anyone, I will try more, without my own judgement.

    I used monfruit & it created hard to dissolve sludge. Just heads up. May be better to mix it up with the almond flour instead of melting it in the butter.
