No Bake Peanut Butter Chocolate Protein Bar (FM)

*Makes 1 Bar

Ingredients:
1/4 cup almond flour
2 heaping tbsp crunchy peanut butter
3 tbsp Swerve (erythritol)
2 tbsp unsweetened cocoa powder
2 tbsp chocolate whey protein powder
2 tbsp unsweetened almond milk
1 tbsp shredded coconut (optional)

Instructions:

  1. In a medium size bowl add together the almond flour, whey protein powder, cocoa powder, and Swerve. Mix well.
  2. In a smaller bowl mix the peanut butter and one tbsp almond milk until combined into a soft paste.
  3. Add the peanut butter mixture to the almond flour mixture and use fork to mix. Add the other tbsp of almond milk and mix until you get a sticky dough.
  4. Transfer the dough onto a small piece of parchment paper –  fold the paper over the dough so that every side of the dough is covered and press down on the dough as needed to form a bar. You can sprinkle the top with shredded coconut.
  5. Leave the bar wrapped in the parchment paper and keep it in the freezer.

    Just made this and it’s delicious! Perfect treat when you have a sweet tooth. I cut them into bite size pieces.

    Is the swerve for this recipe supposed to be granulated or powder?

    Tip for anyone who has coconut flour but not almond flour: it’s totally just as delicious, the only thing is it requires a little bit more almond milk 🙂

    Can’t get enough of Z’s recipes.

    Did that one yesterday. I needed more almondmilk. I also used the bowl with the peanutbutter und spoon by spoon I mixed in the dry ingredients with a mixer. Before I put the stuff in the freezer, I cut it in bars. After 30 minutes I took it out und parted it. I got 5 portions. I really tastes like a brownie. hmm… Thanks for the recepie. And also, here in Austria we dont have Swerve. I used Sukrin instead. There is no weird sweat taste like it sometimes is with stevia.

    So so excited to make this….I hope I can control myself not to finish it all at once…Peanut Butter mixed with chocolate is my weakness 😋
