No Bake Peanut Butter Chocolate Protein Bar (FM)

*Makes 1 Bar
Ingredients:
1/4 cup almond flour
2 heaping tbsp crunchy peanut butter
3 tbsp Swerve (erythritol)
2 tbsp unsweetened cocoa powder
2 tbsp chocolate whey protein powder
2 tbsp unsweetened almond milk
1 tbsp shredded coconut (optional)
Instructions:
- In a medium size bowl add together the almond flour, whey protein powder, cocoa powder, and Swerve. Mix well.
- In a smaller bowl mix the peanut butter and one tbsp almond milk until combined into a soft paste.
- Add the peanut butter mixture to the almond flour mixture and use fork to mix. Add the other tbsp of almond milk and mix until you get a sticky dough.
- Transfer the dough onto a small piece of parchment paper – fold the paper over the dough so that every side of the dough is covered and press down on the dough as needed to form a bar. You can sprinkle the top with shredded coconut.
- Leave the bar wrapped in the parchment paper and keep it in the freezer.

I just did it but I added tahini to substitute peanut butter that I don’t like it at all. I hope it doesn’t change a lot the calorie and carb in take

Didn’t have chocolate whey so used my vanilla whey with the rest of the ingredients. Tastes lovely – just wondering how many servings this makes?

Hi Zuzka,
do you consider a peanut butter as a healthy option for baking or even using it in our diet? I have read recently a couple of articles where they say that we shoudn’t be really using any nuts flour, peanut butter, seeds, etc. for cooking, baking, only for no baking proccess. As those healthy fats are becoming trans. So now, a peanut butter, while is made from roasted peanuts, means that is already bad. What do you think about that?

This is so delicious!I had craving for something sweet for a few days,couldn’t find what to have with no feeling guilty after 😀 Just have to be careful not eating it all at one go 😀 Instead of almond milk a used coconut milk and vanilla whey protein,and coconut sugar(it is also good as Swerve isn’t it?)
