Open-Faced Breakfast Sandwich on Microwavable Keto Bread! (FM)

I found this microwavable low-carb bread option online and was skeptical about it BUT it turned out really good and is super easy, only takes 2-minutes!

Ingredients:

Bread (makes 4 slices):
1 1/2 cup almond flour
1 teaspoon baking powder
2 tablespoon olive oil
2 eggs

Toppings:
1 egg
2 pieces of bacon (optional)
1/4 ripe avocado, mashed
chilli pepper flakes
salt & pepper to taste

Instructions:

  1. in a medium bowl mix together almond flour and baking powder then add the olive oil and 2 eggs and mix well to form the dough
  2. in a small microwavable container (mine was approx. 5″x5″ square glass tupperware) mold the dough into the container and press down so it’s even then put in the microwave for 2 minutes, let cool until you prepare the rest of your sandwich
  3. cook the egg and optional bacon to your liking
  4. turn the bread container upside down and tap on the top (it should fall out easily) and slice evenly into 4 pieces.
  5. plate a piece of the bread, spread on the avocado and sprinkle on chili pepper flakes then top with bacon and egg and season with salt and pepper to taste, enjoy!

* You can store the 3 extra pieces of bread in the fridge for up to 1 week 🙂

Carbs: 12.7 g
Net Carbs: 5.7 g
Fat: 49.5 g
Protein: 27

    I’ll have to try this one. It’d be nice if we could mark the recipes we like or want to try the same way that we are able to “mark as favorite” the workouts.

      You could probably bake it, but it would take longer. Just make sure you put it in an oven-safe dish.

    This looks awesome but I’m a bit confused. Do you microwave the entire thing in a 5×5 dish and then cut that into 4 servings? Seems like each one would be awfully small…?

      That’s what I did – 1/4 is not small actually – also since it is made of almond flour it is very filling.
      I had 1/4 and felt stuffed! (and I have a very healthy appetite!)

    Hi all!

    First post on the site 🙂

    I made this bread yesterday, and it turned out pretty good! My boyfriend also tried it, and while he is not a fan of bread/crust made with almond flour, he did mention the texture of this bread would probably make it good for soup dumplings. Plus it took a total of 5 minutes for me to make I think 🙂

      Did you use the exact same amount of almond flour? I tried it as well, but it was not moist enough?

        Hey! Yeah I followed it exactly the first time and it turned out okay.

        As a side note, I ran out of almond flour the last time and tried substituting coconut flour…did not end well. Lol 🙂

          oh..good to know 😉 in the end..I have to say…I only eat a good piece of bread once in a while..and I always have a piece in the freezer, make the bread even myself – so I know whats in eat..and it is super healthy ;). So since I barely eat bread anyway, I probably eat a piece of real bread..thanks for answering 😉
